letter from the editor Here we are at May already, this year is really flying by! We're celebrating our love of painted cakes in this issue. Painted cakes have recently taken the cake decorating world by storm, from chalkboard cakes to pretty florals, painted cakes are everywhere we turn (and we love that!). Our tutorials for this issue focus on showing our readers how to master the basics of painted cakes. You will need: • Powdered Petal Dust I used Carolines Apple Green, Fuchsia, Plum, Lemon & CK Lime Green. • Decorators Rose Spirit • Assorted Paint Brushes • Paint Palette • White fondant covered cake f Step 1: Step 2: Step 3: Step 4: Start by placing a small amount of pink dust into the palette. Add around 5 - 6 drops of rose spirit to dilute the powder. Dip a small fluffy brush into the paint, wiping off as much excess as possible. Start to paint onto the cake using blotting motions of the paintbrush. Keep this blotting motion to create a circular, floral shape. Re- dip the paint brush into the paint & add further colour into the centre of the flower. To create a more ‘watercolour’ look, place a clean brush directly into the rose spirit and brush onto the pink flower. This will move the colour & create a less saturated look.

Step 5: Step 6: Mix the yellow dust with a few drops of rose spirit - this solution should be highly concentrated. On a small brush, dip into the yellow and paint tiny dots into the centre of the pink. Mix the Plum dust with rose spirit, continue to add a few more flowers in scattered positions around the cake. After adding yellow to the centres, we will begin to add in greenery. Step 7: Step 8: Step 9: Step 10: Mix the Apple Green & Lime dust with the rose spirt. Taking a flat angled brush & paint two ‘bracket’ lines to join into a leaf. Continue to dip the brush into the green, painting various leaf patterns. Mix paint as you run out, blending the plum & fuchsia for a mixed colour. Continue to paint florals scattered across the cake. Continue to fill blank space with colour & greenery. Paint will dry instantly. Avoid storing cake in direct sunlight to avoid fading of paint colours.

Painted mosaic By Vincent Goh of Van Goh Cakes You will need: Equipment • Fondant smoothers • Large rolling pin • Paring knife • Pasta machine (optional) • JEM 12 frilling tool • Dresden tool • Palette • Flat tip paintbrushes • Pizza cutter Ingredients • 1kg black fondant • 400g white fondant • Double barrel 6” round ganached cake; or a 6” (15cm) round foam dummy 8” (20cm) tall • 1 Silver leaf transfer sheet • Petal dusts - lemon yellow, tangerine, ruby red, fuschia, red • White lustre dust • Americolor Super Red f airbrush colour • Rose spirit

Step 1: Step 3: To make the black fondant marbled white, I used approximately 1kg of black fondant with 250g of white fondant. Instead of a kneading action, pull the two pieces of coloured fondant together so that you do not lose the marbled effect. Cover your cake with fondant - I’ve covered mine over a foam tier, but you are most welcome to use a cake covered in ganache. As this is a tall cake, make sure you secure the top section of the cake so as to prevent the fondant from tearing. Once your cake has been covered, cut of any excess fondant. Step 5: Step 6: Step 7: Using two fondant smoothers, attempt to get sharp edges with your cake. Using a small rolling pin, roll out some white fondant (approximately 80g) until it’s thin enough to put through a pasta machine, then roll out the fondant in the pasta machine to thickness number 3. Repeat the same step as before to have a piece of fondant for the silver leaf. Use a paintbrush to wet the sheet of fondant with water to make it tacky, so the silver leaf will adhere to it. Step 2: Knead it a little and roll out the fondant to 4-5mm thickness to cover this tall piece. Step 4:

Step 9: Place the silver leaf onto the fondant, gently rub it so ensure the leaf adheres to the fondant. Peel the backing paper away. Place white lustre dust into five different containers, in a palette. The amount of white lustre dust needed per colour is about a half-circle end of the JEM 12 frilling tool, alternatively you could use the end of a dresden tool. Add the five different colour petal dusts into each containers, and add into each pot some rose spirit. You may increase saturation or intensity of the colour by adding more petal dusts. Step 12: Step 13: Step 14: Step 15: Paint the petal dusts onto the sheet of fondant - and paint all five colours as random as you want. You could paint over areas of the fondant. Let the fondant rest and dry a little. Use another paintbrush and dab some red airbrush colour into some rose spirit until you achieve desired colour. Paint onto silver leaf until it you \

Step 16: Start applying these pieces onto the cake following the outline that you drew with the dresden tool. I used water to adhere the coloured pieces onto the cake. You will need: • A 6” double barrel cake of your choice • Non toxic chalk, non toxic white pencil covered in black fondant and allowed to set over-night or for 24hrs. or titanium dioxide • Baking/tracing paper • 250g Black fondant, extra • Low tack masking tape • Non stick rolling pin • Metal ruler with inch marks • Non stick mat • Tylose or cmc powder • 5cm (approx) heart cookie cutter • Sugar glue • 2 bamboo skewers or 18g florist wire • 500g white fondant to cover board • Design of your choice • Acetate smoother • Cake stand • Xacto or Craft knife • AmeriColor Bright White and Super • Water Red gel colour • Paint brushes of various sizes (I used 00, 1, 2, 3) • 6mm red satin ribbon • Double sided tape • Cornflour (optional) • Artist pallet • Castry brush (optional) • Non toxic lead pencil • Dry soft chux cloth or soft large brush (optional)

Steps to create your Chalkboard cake Making a chalkboard cake requires some pre planning and a bit of forward thinking. A lot of thought goes into, the choice of your design, which can be anything from laurel wreaths and flowers to romantic quotes, the time taken in drawing your design and finally applying your design to your cake. Factors which influence your design include the number of tiers, size of tier and height of your cake. Your covered cake must also be level, otherwise the design will look lopsided. Painting on a cake is quite nerve wracking and it takes a steady hand to paint on a vertical surface, no matter how many cakes I paint my hand always shakes before I make the first stroke! If you have never painted on a cake before, I suggest making the two hearts first and use the heart’s laurel and letter design as practice on a flat surface (Step 15). Step 3: This step needs to be done 2-3 days before you start your cake to allow the hearts to dry completely. Add a small amount of tylose or cmc powder to your extra black fondant and kneed well. Step 2: Roll out the fondant on a non stick mat to 4-5mm thick and cut out 2-3 hearts. The beauty of the chalkboard cake is, if you don’t have a non stick mat and need to use cornflour, any white marks left by the cornflour on the black fondant will add to the chalkboard effect! Dip your bamboo skewer into the sugar glue, dab/wipe off excess. Insert into the point of the heart lightly guiding the skewer 3/4 of the way into the middle of the heart with your index finger and thumb, like you would when inserting a florist wire into a gum paste flower petal. Set aside to dry. Step 4: Step 5: Step 6: Step 7: While the hearts are drying, bake, ganache and cover your cake in black fondant and allow to dry for 24hrs. In this design I have made a 6” by 6” tall (double barrel) cake, and have covered it using the wrap method. Trace your chosen design onto baking paper, making sure the design is a little bit smaller than the height of the covered cake. For this cake, the design I have created is based on a quote from Shakespeare. Measure and cut the baking paper to the size of the cake. Flip the baking paper design over and trace over the underside with either a non toxic pencil, non toxic chalk or titanium dioxide. It’s best to play around with these, to see which you prefer. I have found the one which has the best result is the non toxic pencil although it is quite hard to see the grey on the black fondant, so in this tutorial I have used non toxic chalk so the design image can be easily seen. Step 8: Step 9: Step 10: Attach the baking paper design to the cake with masking tape. Make sure the design is attached securely and straight. Start tracing your design on to your cake. I prefer to sit my cake on a cake stand so that it is off the table. To ensure that I have a steady hand, I rest my drawing hand on my free hand. Step 11: Step 12: Step 13: Carefully remove the tracing paper to reveal your design. I found using the non toxic chalk as a tracing medium, it leaves a thicker residue which is easily removed with a soft brush. To paint the design you can use either white gel colour or tita

Step 14: For the heart in-between the laurel mix a small amount of super red with the bright white gel on the pallet until you have achieved the desired red colour. Using a size 3 brush, paint the heart outline first and fill in with long strokes. Allow to dry. For a brighter red, paint a second coat. Step 15: Take your two, now dry, heart “pops”, lay them on a clean flat surface and trace on your design. In this case, I painted the laurels, flowers and lines free hand, then once dry, added the letter. Step 16: Step 17: You now have painted hearts and your painted cake. Measure the distance require to place the hearts evenly in the cake. Gently, while holding the skewer, push the hearts into the cake until the heart points are resting on the cake.

Additional tip: I prefer a clean chalkboard look with minimal “chalk” dusting. If you would like a dustier look, place the tip of a pastry brush into a small amount of cornflour and lightly brush over the cake. Take a dry soft brush like a make up brush or a dry chug cloth and remove the excess cornflour until you achieve your desired result. Step 19: Finish your cake by covering the display board with white fondant and attaching red ribbon. Congratulations! You have now finished your gorgeous hand painted chalkboard cake! f

Picture frame cake By Laura Dodimead of Cakey Bakes Cakes You will need: Equipment • Greaseproof paper • Pallet knife • Sharp knife • Craft knife • 6” square board • 10” square board • Pizza wheel cutter • Paint brush No1 & No 4 • 1 x Dowl • Pencil • Rolling pin • Dresden tool • Bellissimo cake smoothers Ingredients • 12oz margarine • 12oz caster sugar • 12oz self-raising flour • 6 eggs • 250g vanilla buttercream • 800g of white sugar paste • 700g black pastillage • 200g cream modelling dough f • Black food colour dust • Vodka

Step 3: Step 1: Step 4: Turn the cake up on its side and insert a vodka dipped dowl in to the centre of the cake for support. Cut of the excess so it sits level with the cake. After baking a 7” square cake, trim off the edges to make it a 6” cake & divide it in to 4 equal sections using a sharp knife on to a piece of greaseproof paper. Step 2: Stand the cake up on its side and stack each cake slice on top of each other filling buttercream between each section. Using a blob of buttercream, place a 6” card to the back of the cake then lay it down and spread the remaining buttercream all around the cake and allow to set. Step 5: Step 6: Step 7: Step 8: Roll out 800g of white sugar paste and drape over the butter creamed cake. Trim off the excess with a pizza wheel cutter and smooth the top and edges with bellissimo cake smoothers to create a sharp edge. Set the cake aside and take a square of greaseproof paper. Draw the design on to the paper with a pencil including all of the shading details. Position the drawn design on to the top of the cake. Using the Dresden tool, trace over the outline using enough pressure to make an indentation but not too much that it pierces the paper. Be careful not to press your fingers into the paste while holding the paper in place. Mix half a teaspoon of black food dust with a few drops of vodka. Using a No 1 paint brush, start to paint a faint line around the indentations made previously, to show the whole outline.

Step 11: Step 10: Add a little more paint to the brush and paint thicker lines where the shadows will be. Water down a little of the black paint with more vodka to create a dark grey shade. Begin to add the shadowing to the eye, chin, lips and neck. Step 13: For the main frame, roll out 700g of black pastillage to a 3mm thickness. Place a 10” board on to the paste and cut around it with a pizza wheel cutter. Make a window in the centre with the 7” board and a craft knife. Step 12: To make the cream mount for the frame, roll out 200g of cream modelling dough then place a 7” square board on top of the paste and cut around it with a pizza wheel cutter. Step 14: Place a 6” square board in the centre of the 7” square piece of paste. Cut around it with a craft knife and set aside. Add a sprinkle more of black dust to the mixture and paint into the corners of the outline following your original picture. The darker the paint the more depth you create. Concentrate on the lip corners, nose, under the jaw, the eyebrow and the neck. Step 9: Step 15: Glue the cream frame to the inside of the black frame. Once dry attach to the cake with royal icing and stand on an easel.

You will need: • Vanilla shortbread or sugar cookies cut into a rectangle (or any shape that suits the stamp size) • Piping bags fitted with couplers and tips (#1.5, #2 and #4) • Un-inked stamp (used for food only) • Small paint brushes: round and square (used for food only) • Royal icing • Paint palette • Vodka (or water) • Food colour gel pastes • Toothpicks (ivory, sky blue, leaf • Paper towels green, soft pink, bright white, egg yellow) Step 1: Step 2: Make royal icing according to your recipe. Place most of the icing into one bowl and tint with a small amount of ivory gel paste. If necessary add a little water to achieve a stiff piping consistency (similar to toothpaste). Scoop some of this icing into a piping bag fitted with a #2 tip. Add more water to the remaining ivory icing to achieve flooding consistency (similar to thick honey), stirring gently with a silicon spatula. Place into a piping bag fitted with a #4 tip. Separate the remaining icing into two bowls and tint with white and egg yellow gel pastes. Add water to achieve piping consistency and place each colour into piping bags fitted with #1.5 tips. Outline baked cookies with Ivory piping icing and immediately fill with the flood consistency icing. With a toothpick, pop any air bubbles that rise to the surface. Tap the cookie a couple of times to help distribute the icing evenly (stamping works best on as flat and even a surface as possible). Allow cookies to dry uncovered for 12-24 hours. This step is very important as the icing must be completely dry before applying the stamp (otherwise you may crack the icing). Add a small drop of ivory gel paste to your palette. Using a small food only paint brush, mix the colour with a small amount of vodka or water. Paint the colour onto the surface of the stamp. Do a few test stamps on paper to see how the image transfers.

Step 3: When you’re ready, repeat the process of painting the stamp but this time stamp your iced cookie. Apply the stamp from directly above the cookie and press firmly but gently. Lift off in an upward motion taking care not to drag the stamp as you lift. If you find the image has not transferred completely, fill in the details with a tiny paint brush dipped in the ivory colour and remember to apply a little more Step 4: colour to the stamp for the next cookie. With small paint brushes (one for each colour) mix with a little vodka or water. Blot the brush well on paper towels then paint the sky and grass background with light backward and forwards strokes, avoiding the stamped image. Paint the inside of the bunny’s ears and the tiny heart with soft pink. Step 6: Step 7: To finish, add some flowers with the white royal icing, add yellow dots for the flower centres, and paint the stems with leaf green. Airbrushing Basics~Woodgrain By Diana Scandizzo Italia of Where Is My Airbush You will need: • Airbrush • Yellow airbrush colour • Brown airbrush colour • 2 pieces of paper (or your fondant & 1 piece of paper) Tips • Airbrushing is lots of fun and once you get a little practice in you will be airbrushing everything- from fondant cakes, buttercream(let it crust first!), royal icing on cookies, macarons, ganache, adding texture to flowers, edible lace, wafer paper etc • Use an egg cup to mix colours and make different shades. Step 2: Step 1: Fill your airbrush colour pot ¾ with yellow airbrush colourand spray one piece of paper (or your fondant area) with the colour With the other piece of paper you need to rip the paper to use as your templates for your woodgrain. 2 triangle/rainbow style rips and then 2 long pieces. Label them as template 1-4. Step 3: Step 4: Fill your airbrush colour pot ¾ with brown airbrush colour. There is no need to rinse your airbrush out in this instance (only pour the yellow back into the bottle if there is still some left). On your piece of coloured yellow paper(or fondant) place template 1 onto the centre of the area. Airbrush half onto thetemplate and half onto the yellow base. You only need to airbrush around once. Continue to move your template down to create arcs. Ensure you hold the template while you airbrushrather than placing it down and picking it up as it is much easier to create your wood grain while you are airbrushing and it won’t blow away from the air from the airbrush. It doesn’t look pretty and it won’t-just yet.

Step 5: Using template 2, turn your base around and do the same as in step 4. Still doesn’t look pretty yet. Step 6: Step 7: Using template 3(long straight paper) complete the same process as step 4 & 5. Still not pretty! Using template 4(long straight paper) complete as step 4 to 6. Now it’s looking better

Step 8: f Step 9: Using the rest of the brown in the colour pot colour from the top of the area to the bottom spray the entire area evenly to cover a majority of your base colour yellow. Go over the area twice. If you prefer a dark wood then go over it a third time. There you have it- wood grain effect using your airbrush, some colour & paper as your template! You can also use this technique to create other things such as clouds, grass and waves. Let’s create some wood knots. Using the brown just spray round blotches randomly on the area.

One of the first commercial jobs I was asked to include a banner with ‘happy birthday’. I tried for a few hours to pipe the letters and it just wasn’t working, so I decided to try painting it on. It worked brilliantly and the very next day I made some cookies covered them and started painting flowers. I haven’t looked back since! As my littlest child was still at home I took it very slowly, only becoming a full time cake decorator once she started school. Tell us a little bit about your new book “The Painted Cake”. Why did you decide to write it and what will people get out of it? Written by Marianna Saran As the owner of Nevie-Pie Cakes in the UK, Natasha Collins has a niche market in the caking industry, as her business is based on specialising in hand-painted cakes. Art and baking runs in Natasha Collins’ family, so it’s without surprise that her hand-painted cakes are just gorgeous to look at. Tell us a little bit about yourself and how it came about that you’re in the cake decorating industry. I’ve always enjoyed baking, I can remember making my first cake when I was around 7 years old. It was a sponge cake made in a loaf tin. The top was very cracked and I poured green water icing over it. It looked terrible and probably didn’t taste that great either (although I can’t remember that bit!) I just kept at it though and practiced every week. I have a picture of myself at about 12 with a cake I made for my brother. It was decorated with a marzipan figure fishing in a pond. I started baking and cake decorating as a business after I had my two children. I trained as an illustrator and then worked as a textile designer for nearly 10 years. I needed to do something creative though after having my girls and I tried various different crafty enterprises. I started making cakes for their birthday parties and after a few years decided that they would be good enough to sell. After training as an illustrator I always had an ambition to write a book, although I thought that it would be a children’s book rather that one for cake decorating. Most of the projects have templates, so if you are nervous about painting free-hand you can trace the design first. My biggest hope is that readers of ‘The Painted Cake’ is that they will be inspired to try something new and that they have lots of fun while doing it. What has been your favourite painted cake that you have created to date? Probably my favourite cake has been my Owl and The Pussy Cat cake. It brought together all my careers so far, illustration, textile design and cake decorating. I really enjoyed creating the story around the cake and coming up with the cute figures. As my career as a cake painter and teacher progressed I started to get a lot of emails from people all over the world asking me if I had a book they could buy. So I wrote a proposal (that alone took me six months!) and I was very fortunate that Murdoch Books liked it enough to commission the book. Writing ‘The Painted Cake’ was a great experience, one that I hope I get the chance to do again. I was also really pleased that I had the opportunity to create illustrations that were used in the book too. The book is great for beginners up to more advanced painters. It goes through all the techniques you will need, how to apply the paint, how to rectify mistakes, how to create tones and detailed instructions on how to paint flowers. What should people consider before attempting a painted cake? You need to think about the equipment they are using. Some food colours aren’t suitable for painting with, they dry with a plastic finish which makes it impossible to layer with tones. Also some fondants are easier to paint onto, one with a high fat content will tend to repel the paint giving it a strange texture. If you are very nervous about painting then roll out a sheet of fondant and practise on that first before you attempt to paint a cake.

What are the important points of preparation, prior to painting on a cake? Actually it is really easy to rectify a mistake when painting so once you have painted your design it isn’t necessarily permanent. It helps to have a sketch of your design and even a practise sheet, so that you are not making it up as you go along. If you are a beginner then trace the outline of your design onto the fondant with normal craft tracing paper or greaseproof paper and a HB pencil. The pencil marks will wash away as you paint over them. This takes away any fear of painting onto a blank canvas. And always start on the back of the cake, as the first marks you make are usually going to be the less successful element of the design. Once you have started you will warm up and find your own rhythm. Are there designs people should steer away from when painting on cakes? The type of design you create will really depend on your own style and hand. However I would advise steering clear of a design with too much black paint as this not only can look harsh but can leave an unpleasant stain around the mouth after eating (I learnt this after dishing out 30 black outline biscuits to my daughters class, especially as most of the kids started eating them by licking off the icing first!) Designs that are very detailed, for example some geometric or paisley patterns that have a lot of tiny elements included are best avoided. This is more for practical reasons, as painting a whole design like this would take too long and the cake would be off by the time you had finished! is a synthetic round head brush. I only ever need three sizes, 0 for fine lines and details, 4 for ditsy designs and an 8 for everything else. Don’t go and splash out on a full range of brushes, these three sizes will be all you need Do you have any tips for achieving different colours? Colours in a palette can look very different once they are on the cake. So I would have a piece of rolled out fondant next to the cake to test colours on first to make sure it is what you want. Most brands have a big range of colours so you don’t need to worry too much about having to mix colours yourself. However the trick to creating a great design is to use different tones. For example if you are painting a red rose you should use around four or five tones of red to create depth and movement in the flower. This is something a lot of my students find difficult, especially creating a light enough tone for the base colour. I always use water when mixing tones rather than white paint as this can deaden a design. You put a tiny amount of the paint onto your palette, then wash your brush so that it is totally clean. Create a separate pool of water in the palette then add small amounts of the colour to the water until you have achieved the desired tone. If you do it the other way - adding water to the colour in the palette you will find it too difficult to create a very light tone. What are your top three tips for painting on cakes? The most important thing to remember is that everybody paints in an individual way. Even if you are using the same reference as somebody else your finished products will look different. So don’t let yourself be intimidated by other painters, \

Painting on cakes can be daunting, is it as hard as it looks? What are your tricks for cleaning up painting mistakes? The actual technique of painting onto fondant is quite easy and you can learn the basics in a very short time. However as with any technique to master it you have to practise, practise, practise. You just wash off the area you want to remove with clean water and then rub it over with some kitchen roll. The area should dry in around ten minutes and then you can paint over it. I have used this technique on designs that are a few days old and the paint comes right off! Most of my students are always amazed (and relieved) when I demonstrate this for them. What is the benefit of painting on cakes compared to using other methods of decorating? For me it is so much quicker than other methods, and the results are instant. There is no waiting for days of drying time before you see the finished product. Also I think that it is much more of an individual pursuit. Each person will create a unique work of art rather than a carbon copy of a master design. Is there anything important to know about colours before starting? For example do they darken or mature and give a different effect over time? If you use neat colours for creating shadows these can sometimes remain tacky, however as this is only used on small areas it’s not normally an issue, but you can cover your design with a thin layer of edible varnish (this can be bought as a spray can) which will fix your design. In very humid conditions sometimes the painting can bleed slightly, this gives it a fuzzy look. Again a spray of varnish should prevent this from happening. If you have painted a dummy cake then the colours may fade over time, but I have cakes that are a year old that are still fine. This will depend on the brand that you use, some brands will fade relatively quickly. Calli Hopper interview with If you’re looking for some inspiration for your hand painted cakes, Calli Hopper of Callicious cakes work is unbelievable. Her ability to capture mood, emotion and time in edible paintings is truly astounding. Written by Marianna Saran Calli has been kind enough to share some of her painting tips with us, to get more of you picking up a paintbrush! Tell us a little bit about yourself and how you came to be in the industry. I fell into cake decorating by accident. Even though I have always enjoyed cooking and baking, the

What is it that you love about painting on cakes? What do you believe to be the most difficult thing about painting on cakes? I was a graphic artist and textile designer for 26 years. Pure graphics, with little to no fine art painting or illustration. I did not study this at college so steered away from it. I always wanted to try it out, like painting onto canvas, etcetera so I started canvas painting in 2008. I loved it so much, so when I started cake decorating, my cake surface became my new canvas and I thoroughly enjoyed this new discovery as it gave me an opportunity to extend creativity onto cake. I think the biggest challenge when painting onto cake is the angles, as it can limit control with the brush. So ensure you set up your project in such a way that you have as reasonable access to your subject, so that may be raising your cake, or tilting it at angles too. What are some of the different methods you use to apply the colours? The two methods I’ve worked with are the vodka and edible colour dusts. The second one I work with is cocoa butter mixed with edible colour dusts. What tips do you have for mixing and preparing colours for painted cakes? My experience in mixing colours comes from way back when I was a textile designer. I used to sit and look at colours for ages to see what colours I could see inside a colour. For example you could look at a brown and see red, or yellow, or green. My tip is don’t be afraid to experiment in colour mixing, you’ll be amazed what a fabulous colour palette you can come up with. For example the colour palette I used to paint this self portrait of Van Gogh. When it comes to painted cakes is there anything you shouldn’t do? I think with all things art related, there are no rules or do’s and don’ts. “Creativity is all about freedom of mind and spirit. So feel free to experiment as mistakes can sometimes become fabulous discoveries and highly liberating.” Are there any specific brands of colour you like to use when painting cakes? Sometimes the odd mistake is inevitable, what are you tips for rectifying these? I don’t have a specific brand, just what is available to me, which are mainly Sugarflair colour dusts and pastes. I also have a few Edible Art colours and I also really like the few PME colours I have tried. I only use colour dusts. You can use the gels as well, but it depends on what effect you are looking to create. I rarely use gels as I don’t like the shiny finish. One way is to turn your mistakes into part of design, but if this is not possible then it’s a matter of careful cleaning: Do you transfer your patterns prior to painting? b. If using cocoa butter, I take a cotton bud, dip it into melted cocoa butter and use the same process as ‘a’ I use free hand where I can as it’s easier than trying to transfer, but if I’m in a hurry, I transfer my design on. My suggestion to those just starting out with this medium, is to trace out your outline onto your cake and have your subject/photo nearby so you can use it as your reference to work with. You can use a cel stick with point to press design into cake. Be careful and take it slowly as it’s awkward, and when tracing you can slip and you can push fingerprints into sugarpaste. c. ever use water. This will cause N damage and smears onto your surface. Do you have any words of wisdom for the caking community? a. using vodka and colours to If paint with, I take a cotton bud, dip it in vodka and carefully wipe away the mistake, it might take a few attempts. It will be more successful doing this as soon as the mistake has been made as tends to be more successful. What is your favourite painted cake? I have no hesitation in saying that painting my lions is my favourite. It came straight from my African heart, as most of my life has been spent in African countries and I spent a lot of time in the game parks. I would just like to end by saying that painting is all about self-expression and freedom. Enjoy this inner experience, it’s highly satisfying and fulfilling. When I am painting, I put on my favourite music and disappear into my design, it so therapeutic and calming. Take your time, don’t stress, practise on old boards covered in fondant. It’s so satisfying.

Written by Marianna Saran Avalon Yarnes is known worldwide for her jaw-dropping caking talent. Her cakes are all very unique and can range from gravity-defying to adorable intricately hand-painted woodland animals. Tell us a little bit about your time working in the bakery and how that got you interested in cake decorating. I was just a simple counter clerk girl who handed out pastries, made the coffee, etc. Eventually I worked my way up to the “turntable” and started decorating the basic round cakes. I had always enjoyed art, but was never really committed to a particular medium, more a “jack of all trade” instead of a “master of one.” The turning point came when I watched my first Food Network Challenge! My mind was blown and it was clear to me at the point that this was the perfect career for me. I have now been in the baking industry for 14 years and been a cake artist for about just shy of 10 years. What do you enjoy about cake decorating the most? Something that encompassed similarities to all the art mediums AND I can eat it too? Yes please. "Cake represents celebration, represents the best times of our lives, and is meant to make others happy. In this day and age, the industry has pushed cake into a whole new art form that is not only pleasing to the palate but pleasing to the eyes!" You are extremely artistic, have you studied in this area? The extent of my studies with art was a “Drawing 101” class my freshman year of high school. However, I loved drawing while I was growing up. I used to get comic books, never to read the stories, but to re-create the characters. I didn’t find my love for sculpture until I got my hands on cake however! I just recently started painting on canvas as a side hobby when I find the time. What’s the craziest cake someone has asked you to make for them? Well usually it’s ME trying to push the boundaries of “crazy cakes”. But the craziest I was asked to make was probably the Octopus crawling up the side of the wedding cake and busting out the top. What are some tips when it comes to painting on cakes? Always, always, always have a scrap piece of fondant next to you and see how your consistency and colour is looking before you put it on to your final canvas (your cake). Are there specific brushes you like to use? I’m by no means picky on brand of brush. Each technique and medium requires different brushes. I think getting a good full set of quality brushes and taking care of them is key. Do you mix them with anything to achieve different consistencies? What do you suggest for a thin application and what do you suggest for a thick application? Depends on the type of painting I’m doing. For the most part, I mix my colours with either a high proof alcohol like vodka or with lemon extract. The more “thinner” you add, the less thick the consistency becomes. What is the biggest mistake people make when painting on cakes? Diving in without practicing first. No reason to start painting that freshly fondanted cake without trying your idea out first on a scrap piece of fondant.

For those that are not super artistic but would like to paint on a cake, what suggestions do you have for transferring an image to paint onto a cake? For those who are not super confident with free handing, there is no shame it taking the easy route for the outline. You can tape a piece of parchment paper over the top of your desired image, then trace with a pencil. You can then place that parchment over top your fondant, go over the outlines with a scribe. This will indent the pattern onto the cake. What is one thing you think people should know before deciding to set up a cake decorating business? Its non-stop, all the time, go go go. I used to dream, literally day dream, of “the easy life of owning my own bakery” and how I would do it different and right...then I was smacked on the side of the head with reality. It’s a ton of work. Employees, overheads, paperwork, AND then you get to bake, ice and decorate. Long, long hours. With that being said, it can be extremely rewarding. I suggest that people do their homework. See what the demand is in your area. See what your competition is (both skill and price-wise). What the demand is as far as event centres and wedding venues in your area. Make a business plan. If you aren’t business savvy and you want to work on strictly on cake, consider a business partner. All in all, do your homework and be realistic. Are there any secrets to fixing up painting mistakes? How do you suggest people achieve depth in a painting on a cake? If you do mess up there is still hope. Blot your mistake with a dry paper towel first (don’t smudge). Then take a paper towel with either alcohol or lemon extract on and blot until it’s been removed. Pay attention to shadows and highlights. Try to look at your inspirational object objectively, try to fight what your memory is telling you this particular object looks like. For instance, if you were to draw a face, you memory might say “Draw an oval with two ovals for eyes...” etc. Instead try to look at each line/shadow individually and replicate that. What do you enjoy about painting on cakes most? That if you choose your edible mediums wisely, you can almost replicate any traditional art mediums (acrylic, oil colors, etc). Edible mediums also have some helpful characteristic that traditional mediums do not posses. I think the exploration of painting on cakes has just begun and 2015 will bring some amazing artists out of the woodwork. When you’re going to paint on a cake, do you have a creative process you follow to create a cake from start to finish? I always start with a faint outline of my object, I usually then move from the top down, concentrating on shading and then reverting back to highlights. Will you be coming down

Pistachio Cake with White Chocolate Raspberries 20 minutes 30 minutes 2-3 hours 16 serves Recipe by Food Daily fooddaily.com.au Ingredients Method For the cake: • 240g pistachios, unsalted and shelled • ½ cup Natvia Baking Mix • 3 tbsp Natvia Icing Mix • ⅔ cup plain flour • 6 egg whites • ⅓ cup oil For the cake: 1 Preheat oven to 160°C. Grease and line two round sandwich tins with baking paper. 2 Process pistachios, Natvia Baking and flour to a fine powder. 3 Whisk egg whites until stiff peaks form. Add Natvia Icing, a heaped tablespoon at a time, whisking well after each addition until thick and glossy. 4 Gently fold a third of the egg white mixture into the dry ingredients. Then fold in oil and the remaining egg whites. 5 Divide cake batter evenly between the two tins, levelling out the top, and bake for 25-30 minutes or until an inserted toothpick comes out clean. 6 Set aside to cool in the tins. For the icing: • 250g raspberries (defrost if using frozen) • 2 tbsp Natvia Icing Mix • 1 titanium-strength gelatine leaf, soaked in cold water for 5 minutes • 500g low fat cottage cheese, blended to a smooth cream For the vanilla syrup: • 2 tbsp honey • 1 tbsp water • 1 tsp vanilla For the white chocolate raspberries: • 90g white chocolate • 2 tsp oil • 60g raspberries, (not thawed if using frozen) Natvia is the perfec t alternative for your sweet cravings! With only 0.4 calories per serve Natvia is set to sweeten desserts and baked treats withou t the guilt! For the icing: 1 Process raspberries, Natvia Icing and 1 tablespoon water until blended and strain through a seive, pushing as much syrup through with the back of a spoon. 2 Heat 3 tablespoons of syrup to a simmer in a small saucepan and add squeezed out gelatine sheet, stirring to dissolve. 3 Remove from heat, add to remaining syrup and blend into cheese and refrigerate until required. For the vanilla syrup: 1 Heat honey, water and vanilla in a small saucepan (or microwave) until combined and brush tops of the cooled cakes. For the white chocolate raspberries: 1 Place white chocolate and oil in a small bowl set over a small saucepan of boiling water, stirring until melted. 2 Using a toothpick, dip raspberries into chocolate and set aside on a sheet of baking paper to set. To assemble: 1 Spread ⅓ cup of raspberry icing on one cake and top with the other one. 2 Spread the remaining icing over the top and sides of the cake and refrigerate for 2-3 hours. 3 To serve, scatter raspberries over the top of cake.

ACDN Member Spotlight Cakes by Serene started in 2014 in Brisbane so we are a really young business. My name is Serene and I am the lady behind Cakes by Serene! I was born and grew up in Singapore, migrated to Australia in year 2000, when I did my university studies. After graduation I have worked in various industries and spent a long time trying to find "the perfect job" for myself. I have always envied people whose work is their passion, I have a few hobbies but I never thought any of them could make me a career. My love for baking only started after I moved into an apartment in Brisbane with a nice oven. I had never baked a day in my life in Singapore as most of us don't have an oven at home. Cakes was always store bought. I am also a diabetic so baking for myself seems logical and healthy! I started with cupcakes as they were less intimidating. I baked my first proper cake for my boyfriend (now my husband), and it was a blackforest cake. It was a success, and I found myself quite natural in decorating cakes. My husband runs a café, and I started to bake for his business, with mainly cheesecakes and some cupcakes. My first attempt in making a tiered cake fully covered in fondant icing and decorated with sugar flowers, was my own wedding cake (call me crazy!) but I wanted that challenge. It was a 3 tier red velvet cake that served 100 guests. It was no where near perfect or professional but given the fact I learnt everything from youtube and internet sites, I was pretty proud of my first tiered cake! My interest in decorating cakes using different mediums started from there. It grew to a hobby, then to an obsession (of looking at cakes, and viewing online tutorials). I started to make cakes for friends to gain more experience and confidence. My husband encouraged me to register a proper business and operate from his café selling custom design cakes. I took the plunge and I started to attend more professional cake courses to take my skills to new levels. I practice a lot on dummy cakes when I have no orders to try new techniques. I was lucky to have business management experience in past jobs so I managed to pin down many aspects quite quickly, but I did take the time & effort to learn about pricing custom designed cakes properly, learn certain ethics and professional practices for this industry, and network with other professional cake decorators.

This is something I would encourage every new cake decorators to do so it helps keep the industry be competitive in a healthy, friendly and sustainable way. I still consider myself a newbie in this industry that's full of amazing talented people. I am inspired by many Australian and international cake decorators, and I am working towards finding the niche in my skills and to create my own design flare and style. With the help and support from my husband, families and friends, I have grown so much in just one short year of my caking career. I have yet to try many techniques and skills but the sky is my limit and I will only grow better. I am just grateful, excited and blessed to be able to do what I love for a living, giving a piece of myself in every cake I make, and sending them out with love, pride and blessings.
