Christmas Angel By Little Lady Baker

You will need: Modelling tools Ingredients • Ball tool • 300g of white fondant • Rolling Pin • Cone tool • Americolor gel colour ‘Forest • Non-stick mat • Umbrella tool • Veining tool • Small heart cutter optional (I made mine by hand). green’ • Cake dummy or polystyrene • Americolor gel colours (for stand skin tone and hair) yellow and • 2 wooden skewers chocolate brown • 2 soft bristle artists flat tip • 10g precoloured red fondant paintbrushes • Gold lustre dust • Foam flower pad • Tylose Powder • Small rose petal cutter • Water for gluing • Craft knife (Royal icing optional) Step 1: Step 2: Step 3: Step 4: Add tylose to fondant. Make a cone (approx 10cm tall)- use ball tool and cone tool to shape a neckline. Pinch to create the waistline then insert skewer leaving some protruding from the bottom as well as the top. Mark waistline. From the waist- use a skewer to indent the skirt. Add the neck (use a little water for gluing) and let dry for 30 minutes. Mold a head, with your fingers create a subtle face shape. Use a ball tool to create a shallow cavity to insert the head over the top of the neck. Draw your wing template.

Step 6: Step 5: With your knife, carve pockets into the back of the angel for the wing tabs (Use your wing templates to measure lenght). Cut out fondant wings using the template -not too thick. Dry on the bootom end of spoons and gently turn up tabs that will insert into back of the angel. Roll fondant wafer thin then using a small rose petal cutter -cut out wing feathers. Step 14: Step 13: Roll prefered hair colour (I blended brown, yellow and white) thinly, make lines with your knife to create appearance of hair. Apply in layers. Roll a reasonably thin lenght of green fondant. Use a veining tool to pull out leaves for holly wreath halo. Step 16: Add red hearts to the ends of the Angel’s belt. Step 15: Gently green lenghth of fonant while applying to the angels head. Christmas Elf By Deliciously Yummy

You will need: Materials • Small Styrofoam ball Equipment • Sugar paste • Rolling pin • Small hacksaw blade • Small Styrofoam block • Flesh • Modelling tool • Sandpaper • Red • Small ball tool • Paring knife • BBQ Sticks & toothpicks • Green • Clay shaper • Circle Cutter Set • Floristry wire • Yellow (small amount) • Piping tip 5 • Head former • Sugar glue • Brown (small amount) • Paintbrushes • Pink coloured dusts • Black (small amount) • Scissor • Gold coloured dusts • White (small amount) • Ruler • Cornflour • Hot glue gun Step 1: Step 2: Begin to shape the face of the Christmas elf. Place a Styrofoam ball inside a ball of modelling paste of the same size. Make it perfectly round. Apply pressure with your thumbs to create the cheeks and the chin.

Step 3: Press in and up in the middle of the lower sphere, create a small protrusion to make the nose. With the help of a pointed clay shaper from the nostril and define the nose. Draw the dividing line between the lips. Define lower lip and upper lip with a small ball tool. Draw the two drops for the eyes, gently hollow the eye shapes and apply a piece of white sugar paste to the eye sockets. Step 6: Step 7: Step 8: Roll small pieces of black fondant for the eyelashes. Then take a toothpick and dip the tip in the white colour and make eye highlights. Apply pink colour to the lips and then dust some pale pink dusting powder on her cheeks. Roll out a very fine brown thread, cut in two. Position the eyebrows. Allow the head to dry. Using a Styrofoam block carve the body. Attach a floral wire where the legs will be and glue in to secure. Step 5: Step 4: Roll out some brown sugar paste and cut two circles with a mini circle cutter, moisten and attach them. Use gold icing colour to blend the iris, cut the pupils with a round tip #5, and glues them to the eyes. Add a line for the eyelid.

Step 10: Step 9: Roll out a long cylinder using green modelling paste and cut it in half to create the legs. Shape each cylinder to look like legs and blend them to create the knee. For the boots, model a cylinder and cut it in half diagonally for the feet. Continue shaping to create the heel and to define the shape of the boots. Step 11: Step 12: Join the legs and boots together. Insert a floral wire through the leg and boot, then insert into the dummy cake. Roll a very thin cylinder and attach as the fur piece for the boots.

Cover the body in red modelling paste and smooth the modelling paste with your finger. You will need: • 60g white fondant • Tylose • 60g turquoise fondant • Small rolling pin • Circle cutters • Edible marker • Cornflour • Small paintbrush • Scalpel blade • Small petal cutter • Box cutter blade • Cake board • Metal ruler • Royal icing • Edible glitter • Pearl head pins • Sugar glue f www

Step 2: Step 1: Select the size for your bauble. For this tutorial I have used 45mm and 57mm. Mix some tylose into your turquoise fondant and roll it out to approximately 3mm thickness. Dust your workbench with a little cornflour and cut out two identical circles. It’s best to have let the fondant sit out for a while before you cut them out – this will help them retain their shape. Leave them on the board to harden. Mix a little tylose into your white fondant and roll it out a little thinner this time – around 2mm. Using the box cutter blade to cut some thin strips. Step 5: Step 6: Step 7: Step 8: Only when the circles can be moved and keep their shape, flip them over and paint the rim of one with some sugar glue. Place it over the fondant strips. Using a scalpel blade cut off the excess strips. Leave this to harden for approximately 30 minutes. Flip the striped section over and paint the rim of the other circle with sugar glue. Place the second circle in place, like a sandwich. Step 3: Step 4: Arrange these strips on the board. You can make any design you like.

Step 12: Step 9: Step 10: Paint the side of the joined circles with sugar glue. Cut out a ribbon of white fondant and wrap it around the outer circle to hide the seam. Very gently paint some sugar glue in the areas you want to put some glitter. Shake some glitter over the bauble and let dry. Step 11: Use a small petal cutter and a balling tool to create the hanger for the bauble. Mix a little royal icing to gently place your bauble onto your cake. Secure it with pins while it dries. You might need to leave it overnight. You can add a little tylose into your royal icing to quicken the drying time. Add the bauble hanger once the bauble is on the cake. Add in some detail by drawing a string line using a ruler and edible marker. You can make any shape you want! The Christmas tree is made using the exact method as above, by using a template instead of circle cutters. f

Snowman cake pop By Sugar Pot Bakery You will need: • Cake pop sticks • Microwave • White chocolate melts • Baked and cooled sponge cake • Vanilla frosting • Green, white, red fondant • Sugar heart sprinkles In the meadow we can build a snowman Even though it’s never snowing in Australia when it’s Christmas, happy times call for easy DIY sweet treats to do with the kids. Cake pops are easier to serve than cake, and require no slicing, no plates, and no forks - and every child gets their fair share of fun. Our snowman cake pop started as two cake balls attached to each other, dipped and then decorated with winter-ware made out of fondant. It can be shaped and dipped 1-2 weeks ahead to avoid the last minute Christmas baking rush. Then they can be decorated with the kids by setting up an assembly line, and put kids in charge of affixing scarves, hats and other trimmings. Place the finished snowman in a cupcake liner and watch kids marvel for a second before gobbling them up! f

Step 1: Crumb the cooled sponge cake into a large bowl and mix well with enough vanilla frosting to create a cake dough similar in consistency to a cookie dough. Roll out two cake balls with one slightly larger than the other. Thread them through the end of a cake pop stick, making sure you’ve dipped the tip of the stick with a bit of chocolate to allow adhesion Step 5: Wrap this around the snow man, making sure you have enough room to add eyes on later. Step 2: Refrigerate till chilled through Melt a bowl of white chocolate melts in a microwave, stirring constantly every 2030 seconds until it’s thoroughly melted Dip the prepared cake ball skewer into the bowl, using a spoon to scoop chocolate all over the cake balls to ensure they are fully covered Step 6: Affix a small red heart sprinkle to the end of the scarf. Step 3: Place on a baking sheet to dry Meanwhile, roll out red fondant into a disc shape. Thread this through the top of the cake pop stick to sit on top of the snow man Add a white fondant trim as shown. This forms the hat. Step 7: Pinch a small ball of white fondant and shape it into a tiny bird. Add another small red heart for its wings. Step 4: Roll out a short length of green fondant and trim to size. The blunt side of a knife or a toothpick can be used to score lines on the scarf Step 8: Using a bit of white chocolate, attach the tiny bird to the brim of the hat. Roll out a small red fondant ball and attach it for the nose Using black edible gel or marker, draw in its eyes to complete the look.

Wafer paper feathered wreath By Sugarpot You will need: • A4 sheet wafer paper- 4 • Craft wire 2mtrs • Cake tin (6 inch round) • Sugar glue • Craft plyers and scissors • Wire (18 gauge)- 9 • Cake glitter • Thick paintbrush • Hot water kettle f

Step 1: Step 2: MAKING THE WIRED WREATH: (A) Using the cake tin as a template, wrap craft wire around the cake tin to form 3 loops. MAKING WIRED WAFER PAPER FEATHERS: (A) Gather the wafer paper, 18 gauge wires, sugar glue, scissors and paint brush. (B) Secure the ends by wrapping around the loops. (B) Fold each A4 sheet of wafer paper in half. Step 3: (C) Cut the folded sheet into 3 strips: 2 thick and 1 narrow (D) To each strip apply (E) Wired wafer paper the smallest amount of strip. glue in the center of one side, place the wire on the glue and press the other half of the sheet over. CUTTING FEATHER SHAPES: (A) Using your scissors cut varied almond drop shapes to the wired wafer paper stripes.

APPLYING GLITTER: Using the slightest amount of glue apply glitter in a pattern onto the feathers. Try not to repeat the same pattern for different colors. STEAMING THE FEATHERS: (A) Holding the feather away from the mouth of the kettle, apply gentle stream of steam. You’ll find the wafer paper curling inwards or out depending on how you hold it against the steam. (B) Once steamed set aside to dry for 5-10 minutes. Step 6: ASSEMBLYING THE WREATH: (A) Gather the wired wreath and the wafer paper feathers. (B) Starting with the smallest feathers, wrap around the wreath. (C) Wrap the wired feather (D) Attaching in one secure to the wreath. direction, place the feathers on the wreath till its almost ¾ covered.

Step 7: FINAL TOUCHES: To the remaining exposed area of the wreath wrap the 18-gauge wire to complete and carry the rustic feel through. Attach a satin ribbon bow of your choice to one end of the wreath. Secure onto cake with royal icing.

On 7-10th September, 30 Australian cake decorators took over the streets of New York City in a sea of hot pink, for the Australian Cake Decorating Network's first international event, NYC Cake Crawl! We kicked off the crawl by spending the day sight seeing including Statue of Liberty, 9/11 Memorial and walking Brooklyn Bridge. On the following day we headed to Mimicafe Union where both Sachiko Windbiel and Rudy Martinez treated our group to a demonstration each, and a delicious morning tea. Our group was a sight to be seen as we hopped on and off subways and walked the streets of Manhattan in a sea of pink.

Tips to create a Stress-free Christmas Dessert table from Allison of Wild Rose Sweets & Styling One sure way to wow your guests on Christmas Day is to set up a dessert table full of sweet temptations. Although it may seem like a huge undertaking it need not be a cause for stress! We have some pointers that will help you create your table with ease and will allow you to relax alongside your family and guests. Choose your colours… The easiest and usually most fun way to start your dessert table planning is to choose a colour palette. Have a look at your current Christmas decorations, the colours in the environment where the table is going to be placed and the colours that you are naturally drawn to and start your search from there. Your palette choice can also help dictate your style of table. For example, a sophisticated palette of gold, white and ivory would lend itself to a formal look while a fun modern palette of pink, teal and silver might lend itself to a more relaxed table. Just remember to make sure that you choose a palette that you love and that you remain consistent across the table. Create Symmetry… A quick scroll through Pinterest will illustrate that dessert table design can be either symmetrical or asymmetrical. If you are new to styling then work on a symmetrical design as it is easier to find balance with this method. Choose a focal point for the centre of the table and then create balance with matching tableware on either side. The focal point could be a beautiful cake, a tempting cheesecake, some beautiful fresh flowers or a plate of fresh fruit. Whatever you choose just remember to keep it centred and as the highest point of the table. Wild Rose Sweets & Styling Add some decorations… It is always fun to have some coordinating props on the table and you can make it as simple or as elaborate as you would like. Christmas is easy as there are a myriad of Christmas crafts to make or fun decorations to buy. Set up early… Setting up a dessert table can be deceptively time consuming so it is always advisable to set up a ‘mock’ table with your stands and props at least a day or two before your event. This gives you time to play with heights, positioning and combinations of tableware until you are satisfied with your choices. If it is possible to do your mock up in the position of the final table then when you are finished you can leave it there until Christmas Day and your work is greatly reduced. f

Alisha Henderson interview with Alisha Henderson is the talented sweet heart behind Sweet Bakes and Sweet and Co, and there’s no doubt she’s taking the world by storm! The fresh-faced beauty has dazzled international fans with her unique, contemporary, chic style of creating cakes, cookies and desserts. Written by Marianna Saran The Australian Cake Decorating Network is excited that Alisha will be teaching some of her stunning cakes at Sydney Cake Camp early next year. We were lucky enough to chat with Alisha recently to get her take on styling the perfect party. Tell us a little bit about your business and how it came about? Sweet and Co is all about ‘style’ covering everything from gorgeous photo shoots to beautiful events! It was a natural progression for me, as I began to style so many cake photo shoots and dessert tables with Sweet Bakes. From there my interest and experience within the events world grew, and Sweet and Co was born! Tell us a little bit about your rebranding? Sweet Bakes has become the ‘cake only’ business. This is solely me providing sugary goods! Sweet and Co is me taking those baked goods, and then collaborating with other vending vendors to create spectacular features or images. Sweet and Co isn’t just about styling cake - I recently styled a fashion editorial, which I loved! I have always been a very

as a whole. A lot of the time this does mean toning down the designs of the cake or desserts. Simplifying has a bigger impact overall. When it comes to colour are there any rules you stand by? I definitely don’t think there are any rules! I’m constantly surprised by the colours that can all tie together. I like to take those paint swatches from hardware stores and see what works together - there are endless possibilities! visual person, so this Sweet & Co outlet has been a great way to express that creative side. Currently I have been keeping a little bit of a low profile with Sweet and Co on social media as my schedule has been so busy! We have had some amazing events and a few more big weddings to go until the end of the year that I will be sharing very soon! How does your design process for planning an event begin? It definitely all starts with a mood board! It almost always starts with colour for me. I am drawn to particular images and will then base the entire event around that particular image colour palette. My mood boards are broken into sections - one section will be floral inspiration, decor inspo, dessert inspo, the overall look & feel etc. Where does your inspiration for styling an event come from? Anything and everything! At the end of the day though, it should always be a reflection of the client. Styling for me isn’t about just setting up cake stands on a table. It’s about creating a key feature of an event that will give a sense of a theme or mood. Cohesive is a word that is constantly in my brain. Everything from the invite to the napkins should follow a theme! What do you draw upon when trying to match you cake and desserts to your styled theme? I think it is easy to get carried away with trying to every single styling element into cakes and desserts. It’s all about picking what colours will work best. Cohesion is my favourite word you want everything to look beautiful Where are your favourite spots to source props and decor for your events? In the styling world is less really more? I think in a certain sense it is. When I say less is more, I mean that focusing on creating a few key features that have wow factor creates a bigger impact that having 100 less impressive features. I would rather see one huge amazing floral installation, than five small, less impressive ones. You don’t want to overwhelm the eye! You need to draw it to the where the detail lies. What are your favourite styling props? Flowers, flowers & flowers! I do also love good crockery & flatware - small details that

Have you been brainstorming any ideas for styling the perfect 2015 Christmas? I sure have! We are having a big Christmas celebration at my parents’ house this year. Last year I used a lot of bright pink florals and greenery. This year it is going to be completely different! What do you think is going to be the hot new cake trend in 2016? I think there is definitely a shift into real ‘statement’ cakes. More people are wanting something out of the ordinary, bolder choices that reflect them as a person or a couple. Emma-Lee interview with Emma-Lee Cake Design has captivated the caking community with her signature style of dreamy, hand-painted watercolour cakes that are adorned with whimsical wafer paper flowers. Written by Marianna Saran Her passion for all things pretty and sugary has taken her on an amazing journey, which has led her into the world of styling. EmmaLee has styled many events with gorgeous dessert tables that are always filled with an abundance of amazing creations. Tell us a little bit about Emma Lee Cake Design and how you came to be in business. My interest in cakes started the same as many cake decorators, baking my children’s birthday cakes. With a shared interest of all things delicious my friend Mare and I started a little business called Yum ME Cakes. Yum ME Cakes quickly grew and due to personal circumstances I couldn’t take on my fair share of the workload. I decided it was best to venture out on my own where I could take on only limited orders. And thus Emma-Lee Cake Design was born. How did you get into the styling side of things, and what is it about styling events that you love? Event styling also transformed through planning my children’s birthday parties and family events. I enjoy being creative and seeing a vision come to life. It is an all-consuming world and I just love it!

hard though to only use those ideas as starting points and make sure I create a unique point of difference between a party I style and the next. Styling an on-trend party isn’t hard. Making it stand out from the rest is, and this is something I am definitely still trying to learn. What are the top 5 things that should be considered when planning a styled party or celebration? Venue: Can everyone fit? Is there enough room for table set ups/ activities planned? Is there easy access to transport everything needed? From when you’re assigned an event, how do you go about collecting ideas and planning it? Lighting: For myself I have to make sure that the location of the event has great lighting. I absolutely love photographing my children’s parties and special family events and am not the greatest photographer so I need all the help I can get. My first stop is always Pinterest! I usually have a theme/quote/colour scheme in mind and go about collecting images of artworks, patterns and other event set ups. I end up with a lot more ideas than one could ever use in a single event, but as I start to make decisions about what I am going to do, I scrap the rest. There is so much inspiration floating around out there in the world. What tips to you have for controlling styling so that the end product doesn’t become a disast \

For someone starting out in styling what are the top three props or accessories they should invest in? What tips do you have for styling the perfect Christmas celebration? You did quite a magical one last year. As most of my styled events are focussed heavily around a dessert table, my most used styling props would be my collection of cake stands, jars, bottles & vases…which I am constantly adding to. Christmas is a hard event to style for us Aussies! It is SO hot! Last year I focussed on a dessert table using a gorgeous cart and pedestals I hired from Pretty Pedestals. I loved what my family and I created using my mother’s famous Christmas pudding as the centrepiece, however . . . if you have been to one of our family events, be it a wedding, Christmas, birthday or heck, a lazy Sunday BBQ . . . we know how to eat! So by the time dessert came around we weren’t really all that interested. I think investing in a few different size/ shape tables would be a wise one. I personally love the trestle table look at the moment, but I also have a small vintage table that I found on a local Buy Swap Sell page which I will use for smaller events. Giving a dessert table height and dimension is essential and I do this by using old crates, boxes and clear acrylic stands. What is trending on the styling scene at the moment? I am in love with the clean and simple trend with weddings at the moment. Crisp whites, fresh greens and a hint of copper or gold. Perfection! How has the event changed and evolved throughout the years? Thankyou, it has been a helleva ride! Time stands still for no one, so to answer your question, yes the show has changed considerably over these twenty-two years, primarily because the past fifteen years has seen the art itself evolve and redirect at a rapid pace. To stay relevant the show has always been a leader and trendsetter; competing artists and visitors alike eye the designs and draw inspiration from the showpieces exhibited. Themes and content are constantly changed; this year’s rules will no longer apply in 2016. Basic skill expectation stays constant for all levels, but they never know what I am going to throw at them. That’s the fun of being the show director. This year you had the most entries you’ve ever had in the show’s history, which is just amazing! How many entries (on average) do you receive each year for the competition? Normally we have around 600 to 625, this year it went over 700. Astounding really, but that said the show is a natural magnet for competitors so we consistently have excellent registration. I can always count on a few artists that over promise and can’t meet expectations but it really doesn’t affect the overall because we calculate for the attrition ahead of schedule. I see it as a duty to be a mentor to contestants and I am their advocate by making myself available as a resource and guide: Just call me Dr Cake! Love to help them bounce ideas around then distil those thoughts and point them in the right direction before sending them on their way and I never tell. I want them all to do very well and everyone of value knows it. They call me Mother Cake and Momma V viewing me in positive terms. I am hands-on helping them to haul themselves up by their bootstraps t

You have met and worked with a myriad of amazing cake decorators and artists over the years. Who inspires you with their innovative work or their work ethic? There are many great artists out there who avoid the social nonsense and get on with creating and leave the politics out of it. My first would be Karen Portaleo USA a sculptress in a league of her own, Alan Dunn UK is unmatched in florals and foliage, Ceri DD Griffiths UK & RL Clement Sri Lanka, both for royal icing; then brilliant all rounder Australians, Pam Archibald, Shayne Greenman, Patricia Simmons, Marie Sykes, Kerrie Walsh, Kath Swansbra, Eileen Scriven, John Quai Hoi and Pam Leman and that is a limited list there are many more. Be proud of your own and those that made it happen to pave your way. How did you enjoy the event this year? Were you happy with how everything went and how the competitors interpreted the theme ‘Fashion Week’ and composed their entries? Always happy overall, some competitors lost their way and missed the interpretation of theme boat, which alarmed when they reviewed their scores. I thought I had given them an easy pass, but sadly they created cakes that didn’t have much to do with Fashion Week anywhere. Miss the theme and it can be costly. That said, I am but an e-mail or a phone call away so clarification is easy. I temper the seriousness of it all (the stakes are very high) with “Kerry’s Cake and Candy Toss where I hurl these goodies into the crowd and people start begging me to throw them something; lots of laughs and letting off steam. Oklahoma LIVE is also an entertainment for precisely the same reason; competitors dress up and create showpieces in front of a large audience and surprisingly in a short period of time they create remarkable cake artistry, sometimes a bit rough, but they only have an hour and half so that is expected. Choosing the presenters each year is also a challenge. I must find spectacular artists and this year was no exception, Dark horse, Michael Lewis-Anderson baker extraordinaire to the Belgian royal family extended aristocracy and Corps Diplomatique. (He not only earned the royal warrant for his bakery but was personally recognized for his devotion to pastry and the sugar arts) and he has great personality. Michael created a royal tableau dedicated to the pomp and pageantry associated with the upcoming 90th birthday celebrations of HRH Queen Elizabeth II in 2016. On the other hand Creative food stylists, New York Times best-selling authors Alan Richardson and Karen Tack famed for Hello Cupcake, What’s new, Cupcake? Cupcakes & Cookies & Pies Oh My! and now, Cake my Day! dazzled with ‘A Few of HIS Favourite Things.’ Seriously fun groom’s cakes! They have sold over six million books, launched their latest at the show and were inducted with the OSSAS Medal of Honour. Your work at the OSSAS is completely voluntary. You also have so many volunteers that work tirelessly to prepare and look after the show each year, simply because they love you and the legacy of the show. You gave away over $200,000 USD this year in cash and prizes – how do you get such an amazing array of prizes, Sponsors, competitors and support for the show? No one is paid to work at the OSSAS; we do it because we love our art. My 2016 job started the moment the current show wrapped. A massive following on FB does not necessarily reveal a quality artist just a smart snake oil salesperson beating their drum to the faithful following. This is Band Aid cake art. For more delicious Christmas recipes visit bakers-corner.com.au JEWELLED CHOCOLATE GINGERBREAD HOUSE INGREDIENTS 250g butter, softened 1 cup (220g) brown sugar 1 cup (250mL) golden syrup 1 egg, lightly beaten 4½ cups (675g) plain flour ½ cup (50g) NESTLÉ BAKERS CHOICE COCOA 1 tbsp ground ginger 1 tbsp ground cinnamon ½ tsp ground cloves 375g pkt NESTLÉ BAKERS CHOICE WHITE MELTS, melted, plus a 375g pkt extra for decorations Icing sugar mixture, for dusting DIRECTIONS 1. Preheat oven to 180°C/160°C fan forced. Grease and line three oven trays with baking paper. Using your zippy electric mixer, beat butter, sugar and golden syrup together until devine and light and fluffy; add egg and beat until just combined. Add flour, cocoa powder, ginger, cinnamon and cloves and stir until combined; if you prefer use clean hands to bring the dough together to form a voluptuous mass. Turn onto a lightly floured surface and gently and tenderly knead until smooth. Cover with plastic wrap and refrigerate for 30 minutes. 2. Meanwhile, cut paper patterns for gingerbread house: two 12cm x 19cm rectangles for the roof, two 10.5cm x 16cm rectangles for the side walls, and two 16cm x 18cm rectangles for the front and back walls. Trim front and back walls to form two 11cm high gables. OR Log onto www.bakerscorner.com.au and print out templates! 3. Roll dough between sheets of baking paper until perfectly 5mm thick. Peel away top paper and use patterns to cut shapes from dough. Pull away excess dough. Slide baking paper with shapes on to oven trays. Bake, your precious dough pieces uncovered for about 12-14 minutes or until shapes are just firm (they become crisp after they cool). STEP 1 STEP 2 4. While shapes are still warm and soft, use tip of sharp knife to cut out small windows from the side walls of the house, then cut the door out of the front wall. Reserve the cut-out door piece. Trim shapes to straighten sides. Transfer all shapes to wire rack to cool. 5. Place deliciously smooth melted NESTLÉ Bakers Choice White Melts into a piping bag fitted with a 3.5cm diameter plain nozzle. Pipe icing onto the sides and roof panels to decorate. Set aside for 30 minutes or until firm. 6. To put the house together, pipe along the base and side of 1 wall panel. Stand on a flat serving platter, using a straight sided glass to support the wall. Repeat with remaining wall panels to make the walls of the house. Set aside for 30 minutes, or until completely firm. 7. Pipe around the top edges of the walls. Attach the roof panels. Pipe along the top of roof to secure. Set aside for 30 minutes, or until completely firm. 8. By now, your amazing house should be coming together, use extra pkt of NESTLÉ Bakers Choice White Melts to decorate house and make roof tiles on each side of the roof as shown. Attach the bottom row of NESTLÉ Bakers Choice White Melts and allow it to overhang the edge of the ROOF. Continue working up, sticking a row at a time, sitting the row above in the gaps of the row below, so the tiles sit in a diamond pattern rather than straight lines down the ROOF. STEP 2a MAKES One House STEP 3 9. Decorate the walls with remaining melted NESTLÉ Bakers Choice White Melts as shown in picture to make one pretty gingerbread house. Tip – re-roll dough scraps to make and bake gingerbread men if you like. PREP TIME 2 hours (plus standing time) COOKING TIME 15 minutes

In a small saucepan, combine raspberries and V4 cup (6OmL) of water, bring to the boil; cook 3 minutes or until heated through and softened; using a stick blender, blend until smooth, pour mixture through strainer and refrigerate until cool; discard seeds. 2. In a large bowl NESTLE Sweetened Condensed Milk, cream and vanilla; stir until combine; stir through coconutandraspberry sauce. 3. Divide mixture among six 9OmL ice block moulds; insert paddle pop sticks and freeze overnight. 4. Grease and line a baking tray with baking paper. Working quickly and, carefully dip and coat ice creams in melted PLAISTOWE Premium White Choc, place on prepared tray and return to freezer. 5. Meanwhile to make Italian meringue, combine sugar and 60ml (1/4 cup) water in a saucepan over INGREDIENTS low heat and stir until sugar dissolves. Brush down the side of the pan with a wet pastry brush to prevent V/2 cup (75g) frozen raspberries sugar crystals forming. Increase heat to medium and cook, without stirring, for 4 minutes or until syrup 395gNESTLESWEETENEDCONDENSEDMILK reaches 115°C on a sugar thermometer. 1 cup (250mL)thickened cream 6. Using an electric mixer, whisk egg whites until soft peaks form. Whilst mixer is running on low speed, 1tspvanillabeanpaste gradually add syrup in a slow, steady stream, then increase speed to high and whisk for 10 minutes or until meringue is stiff and glossy. V4 cup (20g) toasted desiccated coconut 6 paddlepop sticks 7. ACDN Member Spotlight Emma of My Sweet Dream Cakes Hi! I’m Emma and my little cake business is called My Sweet Dream Cakes in Perth, Western Australia. I’m a mother of 3 and work full time on my little cake business. I’ve always been in awe of pretty cakes, and had someone told me that one day I would be making them myself I probably would have laughed. I began making decorated cakes like most do with making my childrens birthday cakes. I’d never heard of fondant and would blindly put together something my little ones had requested working for hours. It wasn’t until my wedding that things started to take off from there. My lovely husband was too cheap to allow a decent budget for our wedding cake (he actually suggested a store bought cake with an ornament on top eeek!), so I decided I would try and make my own. Looking back now I realise how lucky I was with that cake, not a single hitch along the way, with the fondant rolling onto the cake without a single fold. Beginners luck! We were all more than a bit surprised it turned out as it did and I was encouraged to continue making cakes. That was nearly 5 years ago and here I am now making wedding cakes and celebration cakes every week, a job that I absolutely love. My husband is very proud that his cheapness paved the way for my cake business. My biggest passion is romantic vintage styled cakes. Lace, roses, pearls and ruffles are all features I love to see on a wedding cake. Hand piping lace on a Friday night is my definition of a great night in. Being a little part of a couples big special day is very exciting, and I still fall in love with every reception room I deliver to. I doubt the novelty will ever wear off.

The best thing about decorating cakes is the people I meet. I love getting to travel the celebrations with my clients from engagements to baby showers and beyond. And of course the great friendships I have made over cake, some who I have never met but chat regularly with over facebook. Sometimes only another cake decorator can understand the cheers, triumphs, late nights and procrastination behind each cake. But most of all, I love the look on my childrens faces when they see what I’m working on. For their birthdays, I always get to surprise them and have to work in secret just so I can see the look on their face at the end. f Emma
