letter from the editor Welcome to the August 2016 issue of Cake! magazine. In this issue we celebrate Bright, Bold & Beautiful cakes and other sweet treats. We feature images from some of Australia's most talented decorators as well as many incredible International decorators. We interviewed Amber Comadira-Smith (Commies Cupcakes, page 68), Stevie Auble (Hey There, Cupcake! page 72) and Violet Lin Tran (The Violet Cake Shop, page 76) who share an incredible amount of insight, tips and experiences from their journey into decorating. I would like to say a big thankyou to our advertisers, contributors and readers for your continued support of Cake! magazine for the past 3 years and ongoing. Donut Worry, Be Happy! By Angela Morrison of Cakes by Angela Morrison You will need: • Gel colours (sky blue, lime green, dark purple, pink, burgundy, red) • 900g white fondant plus extra for covering cakes • Circle cutters – 1 ½”, 1 ¼” and 2 ½” • Rolling pin • Sugar glue • 2 x small brushes • Toothpicks • Cornflour • Vodka • Gold lustre dust • Mini dragees (round sprinkles) • 150g pink chocolate, melted f facebook.com/angelassweetworld

Step 1: Divide the 900g fondant into 12 pieces, and tint each piece a different colour with the gels (leave one piece white). Each colour should have two shades (one lighter, one darker). Step 5: Blend 2/3 of a darker shade and 1/3 of a lighter shade and form a sausage. Step 2: Use 30g of the coloured fondant to shape a 3” long sausage. Make a loop by gluing the ends and smoothing it out with your fingers. Step 6: Repeat the same with the burgundy colour. Step 3: Cut out a circle using a 1 1/2” round cutter. Position the circle on the half left of the donut and attach. Step 4: Use a pointy tool to push the fondant down the centre, so you can see through. Step 7: Combine dark purple and white fondant, knead together until it becomes marbled. Shape a sausage and glue the ends. Step 8: Cut a 1 1/4” circle and attach to the centre of the donut. Smooth it out and using a pointy tool reopen the centre.

Step 9: Use a lime green fondant colour to make another donut by following the same steps. Step 13: Sprinkle cornflour to a double colour donut to simulate powdered sugar. Step 10: Make a light green, baby blue, and turquoise donuts. Glue white circles, smooth, and reopen the centre using the pointy tool again. Step 14: Make a marbled donut using pink shades of fondant. Cut out a 3/4” circle and a 1 1/4” circle. Glue them to the centre of the donut. Step 11: Roll thin sausages and glue them across the donut. Step 12: Make a pink donut and decorate it by cutting out different dot sizes and randomly attach them to it. Step 15: Roll tiny sausages and cut them into little pieces to make the sprinkles. Decorate the pink marbled, turquoise, and dark pink donuts by randomly gluing the sprinkles.

Step 16: Combine few shades of burgundy fondant to make a marbled donut. Step 20: Cover the cakes with yellow fondant. Step 17: Add mini dragees to some of the donuts. Step 21: Use pink melted chocolate to drip on the edges of the cake. Step 18: Mix gold dust and vodka. Paint a few spots of gold on the donuts to add shine and elegance. Step 22: Insert a toothpick on the top of the cake and gently slide down the donut topper. Step 19: To make the donut topper, use 100g of fondant to shape a sausage and form a donut. Cut out a 2 1/2” circle and attach to the donut. Decorate with sprinkles. Step 23: Insert two paralleled toothpicks into the cake to hold the donut. Paint some edible glue on the back of the donut and attach to the cake.

Step 24: Attach the rest of the donuts by forming two lines and leaving a 1/2” distance between them. Painted cakes have never been this easy! IMPORTANT!! Cooked isomalt is incredibly hot and can cause serious burns. Before handling any cooked sugar or isomalt product, make sure you are wearing protective gloves. I like to wear cotton gloves, and 2 layers of vinyl gloves over the cotton gloves. This not only acts as a buffer for the heat, but it is also a protective layer that can be quickly removed should hot sugar get on your fingers or hands. Step 1: Using a craft knife and ruler, cut thin strips of the silicone mat. They should be around 1/2” to 3/4” wide. Cut several different lengths. The length will determine how big your agate piece will be. Use small strips of electrical tape to bind the silicone strips into a circular shape. Step 3: Place your silicone rings on top of another silicone mat and carefully pour small amounts of each color into each other as shown in the above pictures. As each color is poured into the centre of the other, the shape will get bigger and develop rings of color. Step 2: Cook your isomalt to 150 degrees celsius, or use a pre-cooked isomalt product such as isomalt nibs. Carefully pour the cooked, VERY HOT, isomalt into your silicone containers. Put 1-2 drops of gel colour in a few of the containers and gently stir with a toothpick. Make one of them white and leave one of them uncoloured. Pre-cooked isomalt also comes in a variety of colours if you prefer to not colour your own. Step 4: To alter the outside shape a bit, you can place cookie cutters randomly around the outside of the silicone rings to make the shape less like a perfect circle.

Step 6: If you have a piece you aren’t completely happy with, before you toss it into the re-melt pile, try warming it a bit on an electric frypan. Place your silicone mat on the griddle and turn it on to its lowest setting. Briefly place your agate onto the mat and allow it to warm up just enough so that it can be bent and shaped a bit. Step 5: It does not take long, so watch your piece carefully. Allow your agates to completely cool before removing Do not overwork your piece. Once you are satisfied, them from the silicone rings. Step 1: With a flat brush, paint vertical patches of different gel colours randomly. Step 2: Once the entire cake is painted, let it dry for a while. Step 5: Cut rectangular pieces of parchment paper. Step 6: Apply very little shortening entirely on one side of the rectangular parchment pieces. Step 3: Dip a big clean flat brush in little clear alcohol, remove excess, and apply a single vertical stroke from top to bottom over the paint patches just to blend in the colours Step 4: Let it dry. slightly. Step 7: Stick the parchment pieces on the painted cake randomly keeping a small gap between two. The gap does not have to be very exact in size between pieces. Step 8: Once all the parchment pieces are stuck, dip a big clean flat brush in little clear alcohol, remove excess, and apply a vertical stroke over the entire cake. You may need to apply additional strokes to remove a little colour from between the gaps. This step will lighten the colour in the gaps.

Step 9: Let it dry completely. Step 10: Once the cake has dried, carefully remove the parchment pieces. Step 11: Lightly rub the excess shortening if any from the cake. Step 13: Stick the broad blue strip on the top tier in the center. Step 14: Stick the narrow green strip over the broad blue strip on the cake. Step 15: To make a bow, cut around 5.5” length of the narrow blue strip and apply a little edible glue in the center. Step 12: For the top tier, roll out and cut a. 1 broad strip of bright blue fondant b. 1 narrow strip of bright blue fondant c. 2 narrow strips of bright green fondant Step 16: Fold both sides of the strip and stick in the center to form two loops on both the sides. Place small pieces of tissue paper between the loops and let dry.

Step 17: Cut around 4” of green narrow strip and stick the center of the strip on the center of the blue loops. Step 21: Stick the bow in the center of the stripes on cake. Step 18: Fold both sides of the green strip and stick in center to form 2 smaller loops. Step 19: Cut a 2” length of narrow blue strip. And stick the end to form a circular loop. Step 20: Stick this in the center of the big loop bow.

Step 1: Wrap a styrofoam ball with gumpaste and create an oval. With the modeling tools create the cavity of the eyes and define the nasal septum. The create the nostrils, apply pressure at the base of the nose. Step 2: With silicone shapers make a circular motion to define the nostrils. To create the eyes, score four dots with modeling tools, connect the dots and draw the eye sockets. Step 3: With the fine point silicone shaper, draw the eyelids. Step 4: For the mouth, make two dots and put them together with the cutter, cutting where there is a cross. With the modeling tools, flatten the cut to create the upper lip.

Step 5: With silicone shapers define the ends of the mouth. With modeling tools, create a groove below the lower lip to create the chin. With silicone shapers, define the mouth. Step 6: With powder colors create facial shadows, using salmon and pearl powder for the cheeks and eye. Mix pink pearl lustre powder with alcohol and paint the mouth. Step 7: Insert a small piece of white paste in the eye socket, and paint the iris with with blue colour. Use black dye to color the pupil using the ball tools. Finally colour the lower lid with a thin line of black.

Step 8: With a tiny ball of black paste create the upper eyelid and cut with cutter. To create the arms take two small balls of gum paste and form two cylinders. Make a diagonal cut at the end of the cylinder. Flatten the cut with your finger and at the base of the cutting, apply pressure to create the wrist. Step 9: Always cut on the diagonal part of the hand to create the thumb. Make three cuts on the hand to create the fingers. Finish the arm by pinching in an elbow. Complete the same process for the legs and leave them to dry naturally, ensuring they are shaped in to the pose required for the final figurine. Step 10: Roll a large cylinder and create the bust. Squeeze the sides to highlight the waist circumference. Gently pull the gumpaste to create the neck, and define the bust with silicone shapers. Step 11: Use your thumb to define the belly and back.

Amber Comadira-Smith interview with Written by Kellie Rudland for Cake! magazine When did you start your business? I started my business officially in July 2015, however I have been cake decorating for a couple of years now. Do you love the process of baking or are you more focused on the design side of things? I am absolutely more focused on the design of the cupcake, rather than the baking process. Creating something that previously didn’t exist is exciting, and designing new ideas can get quite addictive. To me, cupcakes represent a challenge to be artistically creative in only a small working space (67mm diameter to be exact!). What is your design process? Every design process starts off with an inspirational theme, image or thought. The initial inspiration could be a sudden idea I thought of that day, or a quote I read ages ago. To start the process, I usually sit down in front of the TV (and relax with cuppa in hand) with a notepad and pencil, and create a mind chart full of my thoughts and ideas. I then scour the internet for photos -could be textures, fonts, signs, anything that relates to my thoughts - print them out and glue them together next to my mind chart (Year 10 art class anyone?). I then converge all these ideas together and start sketching out concepts for my cupcake designs.

Stevie Auble interview with Written by Kellie Rudland for Cake! magazine You began as an interior designer. What drew you to cake design? I never set out for a career in the cake industry. I wholeheartedly believed that I was to be in the interior design field throughout my professional life. However life is never that certain, and as opportunities presented themselves my perspective altered a bit and I found myself with new possibilities. I LOVE to challenge myself and I found that the cake world gave me so many chances to grow and learn while still being able to design, create and voice my personal style. You are well known for your bold, whimsical designs. What inspires you Literally everything! But if I really narrow it down, I am still completely obsessed with interiors and textiles and I find that immersing myself in that world really inspires me and helps me continue to push the boundaries of my cake designs. Your signature style often utilises bright pops of colour. How do you put together colour combinations? I love contrast & juxtaposition so using complementary colours really just comes naturally to me. I am drawn to colour combinations that in theory seem unorthodox to most but very appealing to my personal aesthetic. I also tend to have an unwritten rule that I follow when it comes to colour combinations - three colours max. You can use different shades and tones from the three colours for added depth and interest. But typically trying to work with a colour palette consisting of more than three lends itself to a busier design and challenges the overall sophistication of the design. Wafer paper is something you use in a lot of your cake designs. What drew you to working with that medium? When I first started designing cakes I was looking for something visually lighter than gumpaste to create decorative elements with, and a local cake store had a few sheets of wafer paper hanging on the wall. I was completely smitten with its translucency and lightness. From there I did a lot of research and found that there was not really any information on how to use it in the ways that I was interested in. So I had to do a lot of experimenting. Talk us through your design process. For my design process I collect as much from the client as possible that has nothing to do with cake. I really want to see every element that they will be incorporating into their event, flowers, invitations, menus, linens, tableware, even fonts. I really want to know all of it. I also take a lot of verbal cues from the clients in terms of what they want the overall aesthetic of the cake to feel/look like. Graphics and textiles typically seem to be what I gravitate most towards and what usually sends my mind spinning with ideas. After accumulating the information, I let the client know that it can take me a week or two (sometimes more) to come up with some initial ideas. Once I have a design the clients are sent my digital rendering of it for approval/changes. I let them know that I am completely open to criticism or even complete redesign if they feel I am off target but usually the initial design gets approved. What are your must-have cake tools? A brand new exacto (love a clean cut!), clear acrylic fondant smoothers and acetate. I’m a minimalist.

Your designs often feature a combination of colours, techniques and textures. What is your favourite medium to work with? I most prefer using fondant appliqués to create patterns, textures or designs. There are SO many ways of doing this so the options and ideas are literally limitless. You can use cutters to cut them out, moulded pieces, extruded pieces, hand cut or hand shaped pieces, quilled pieces and so on. You can even manipulate cut outs to create new patterns or designs just by cutting or arranging them differently. Where do you find your inspiration? Most of my inspiration comes from home decor trends. I am also highly inspired by architecture, fashion, textiles and graphics. Almost anything can be made into cake form so inspiration is everywhere. What are your top three cake decorating tools? One, would be a strip cutter which is perfect for quilling or applying textural stripes to a design. Two, would be a fondant smoother which I use not only when I cover my cakes but to also quickly roll out fondant ropes or make something straighter or to flatten a piece. Three, would be a craft knife. What is your design process? Do your customers give you creative control or do you tweak their ideas? Most clients leave the final design up to me but they all have their requirements of course, based on the occasion or things they’d like to see on the cake. I will first think about what size the client needs for the cake, next what elements they want included, and finally any colours they specifically want. I come up with a quick idea in my head of what I want to do, then I will give them a description of the general idea of what it will look like and quote a price. When the order is confirmed, I sketch up my idea for my own reference. I do not colour it so I can make changes if necessary and I do not show it to the client either as the final design could change drastically. Some clients will ask for a sketch but I will only share it if not much is likely to change and only after they have secured their order with a deposit. Every client is different so this is just my general process when making cakes to order. When I make a cake for a personal project, it will follow along the same lines but with my ideas in place of the client’s, and is a lot looser in terms of the concept and is more likely to change more often because I tend to have lots of ideas and need to edit myself and determine what makes it on the final cake. Colours change a lot too unless colour is the main focus of the design. What are your top tips for someone starting out in the cake industry? My tips and advice would depend on why they are getting into this industry in the first place. If they just enjoy creating cakes that make other people happy, then they should strive to always try new things and learn new techniques so they can keep things fresh and create all kinds of awe-inspiring pieces. If they enjoy the creative side of the industry and thrive on the personal satisfaction of seeing a vision come to life, then my advice would be to try and always maintain creative control over the design and infuse your own aesthetic in every piece you do. Most clients are open to some changes so long as the key elements are included. One can lose their passion in this industry because some clients are so specific about what they want on their cake, or will even send you pictures of the exact cake they want so if you’re in it for the personal artistic satisfaction, you might have to turn down some of these requests or keep them to a minimum. What style of cake is your favourite to decorate? My favourite style of cake to decorate are ones with a nice play on textures, patterns and colour, accented with some simple sugar flowers. I like taking achievable techniques, and adding interest with the colours or the patterns used. Most of what I do, anyone can do...I just do them in a slightly unexpected way. Tell us about becoming a Satin Ice Artist of Excellence. Well, I have to say I was incredibly surprised, delighted, flattered and dumbfounded when I got the email from their Brand Ambassador asking if I would consider being one of their Artists of Excellence! I felt a bit like I was dreaming because so many of my idols were Artists of Excellence and I never thought I’d ever be on their radar because I am quite a small fish in the big scheme of things. I’d never been on TV, never published a book nor entered any competitions. I hadn’t even finish filming my Craftsy class at the time. In fact, my husband and I both laughed at the prospect that I would be in the same exclusive circle as Ron Ben-Israel, Mich Turner, Debbie Brown, Betty Van Norstrand and (at the time AoE) Buddy Valastro. And of course I had to say yes! It has been great so far since they are wonderful at promoting their AoEs on social media and I have been provided opportunities to do demos which is helping to improve my visibility. They even used one of my cakes as their Spotlight Cake on the main banner for The Americas Cake and Sugarcraft Fair in Orlando last September.

ACDN Member Spotlight Amanda Lee of Sugar Sugar Cakes My mother never said it, but I suspect I came out of her belly holding a cupcake in my hand. For as far back as memory goes, creamy cakes, hot cinnamon doughnuts, caramel popcorn and fudge almond ice cream had certain knee-weakening pulls that were difficult to fend off. It wasn’t long before I was “cheffing” as a peewee apprentice at home, then experimenting more (and burning up a few appliances) as a restless teen, finally onto pastry school abroad at Le Cordon Bleu which drew me to the sunny shores of Sydney. After clocking up some work miles in pastry & hospitality across various states, I finally put down roots and fell in love with Adelaide (and subsequently, fell in love in Adelaide). It was during a work sabbatical that I was approached by a friend to make my first novelty cake. That cake led to another, and then to another... which resulted in me becoming my first ever wedding cake client! With the success and euphoria of that first wedding cake bake, Sugar Sugar Cakes was born. Four years into this cake odyssey, and there are a number of feathers in my cap for which I am incredibly humbled and grateful for. Some lovely acknowledgements include 3rd Place ACDN Decorator of the Year 2014, 1st Runner Up ABIA South Australian Wedding Cake Supplier 2015, 1st Runner Up Cake Masters UK Colourful Cakes Competition and ACDN Member’s Monday Winner May 2016.

Since 2015 I’ve also been a cake decorating instructor at Bake Boss Adelaide, and have thoroughly relished in the joys of teaching enthusiasts the art of cake.
