SUMMER DAZE By Marianne Bartuccelli of Tastefully Yours Cake Art Inspiration Artwork This is a very easy and organic design. It depicts the melting heat of the summer sun here in Australia and the cool blue water of the sea. Patterns of summer beach dwellers with their towels and swimsuits, the tropical fish of our reef and the pylons of the pier.....and even our abundant insect life get included.... The upright placement of the smaller top tier adds a great modern twist to this abstract design. All the painting is done with royal icing. Very stiff consistency will give you great texture, and thinning down with water will give a more fluid paint. Try your own version of my design - change the colours, and above all, have some fun! Gradually build colours up, start lightly and build intensity. Some colours may may paint off thefirst and damageyour design. Refer back to your original design for inspiration! Add paint drips by painting a small line where you want the drip to go, then feed this line from the top with morepaint,slowlydrippingitdown. Cont.step 6: Redefine outlines with contrasting colours orblack and white ediblepaint Once your cake is stacked, stand back and see what is missing.Look at using the design in a reduced form on another tier to tie in the design. You can use part of yourinitialdesignand/ortemplatetodothis ifyouwish. MyTipsforPaintingCakes Rolkem dustscan beusedforall purposes.Mixthemwith a little Quick DryEssence orrose spirit (or even vodka).I prefer to use Quick Dry Essence.Ifind that Vodka can damage the colours'integrity, and rose spirit dries too quicklyfor me to blend colours effectively. For strong lines and solid colors, use Edible Art Paints. They are easy to use and dry super fast Americolor Gels may also be used straight from the bottle or slightly diluted, again with Quick Dry Essence, Rose Spirit or Vodka. Note though that if you use the gels in their original form that they may dry with a very glossy finish and in some cases not dry completely,leaving transfer marks and smudges.Also note that when painting onto dark coloured fondant (especially if airbrushed)with gels that lighter colours may dissolve a little or fade (e.g. white may also become blue on black fondant).To get an intense colour, multiple coats will be required. Layer colours to show shading,texture and dimension.Varyyour brush angle and overlay colours for interesting effects. Remove mistakes carefully with vodka orrose spirit, being careful not to damage the design too much or leave unwanted smudges on your cake.If removing a dark colour from light fondant, gently rub over the error with a paintbrush, dabbing with paper towel or a dry brush to remove excess fluid and avoid running. Make sure you use good quality brushes -the last thing you want is hairs all over your cake! Use size O and oo. Baking paper rolls are amazing for transfers for the sides of cakes. They are just the right height and have a nice curve in them already! Work the brush against the grooves until the surface feels tacky.Apply gold leaf against the waves,you can use the line as a guide. Gold leaf will stick to areas that have been made tacky, so whatever that is still on the sheet can be usedtofillthe otherareas.

MODELLING CHOCOLATE SCULPTED HAND By Liz Marek This is a simple tutorial for creating realistic hands. You can definitely use these techniques on smaller figures, but l help identify key anatomical features and practice practice practice! The more you practice, the better you will get! I am using magic chocolate from www.nomorefondant.com because I like the way it sets up very quickly and is a very firm chocolate. You could also use other brands such as Chokit, or make your own if you have a nice firm recipe. Modelling chocolate is always very hard when you first take it out of the package. You can knead it in small pieces until it's smooth and pliable, or you can put it in the microwave for 5-8 seconds and then knead. If it becomes oily, you have heated it too long and you'll need to let it cool before you can use it. I like to work on a silicone mat to prevent sticking and have some baby wipes nearby to clean any chocolate residue that builds up detail work. You will also need a paint brush, water and dusting bag.

Step1: Roll a piece of modelling chocolate into a ball and flatten slightly. It should be slightly smaller than your ownpalmandabout1thick. Use your palm to hollow out the centre of the oval slightly and straighten out the sides to elongate the oval. Turn hand over. Use a knife to cut the top off at a 45 degree angle. Step2: Roll out a small amount of modelling chocolate to make a finger that is about the same length as the palm you made and about 1/4-1/2"thick (depending on what looks proportionate). I use a fondant smoother to roll out the finger and keep it even. Smooth out the tip of the finger so it has a gradual slope. This will be the fingertip. Go ahead and make three more fingers in the same way.The second finger should bethe longest.The third finger should be a little shorter than the first finger and the last finger should be even shorter.Lastly, 45degreeangle.

Step6: Attach the base of the finger to the palm with a little water and smooth out the areas around with your is the longest, the third finger is a little shorter than the first and the fourth finger is the shortest. Step8: Thin out the end until it's a little thicker than the middle finger. The thumb is largerthan all the fingers.Take a look at your own thumb to compare.Make two indentations with your modelling tool for the thumb pad and first knuckle. Smooth out the lines for a soft transition like we did with the fingers.Line the thumb up with the side of the hand and pinch off the excess chocolate. Set thumb aside. Step9: Place your plastic wrap undertheback of the fingers tokeep them supported while you work Smooth out the area under the fingers and fill in any gaps so that the transition between the base of the fingers and the palm is smooth.Add pieces of chocolate where necessary to build out the palm of the hand. Add a few crease lines but don't go overboard.The more lines you add, the older the hand will look.We'regoingmoreforamarblestatue look,nottotal realism.Makesureyousmoothout the transitions from any wrinkles you add like we did onthefingers.

Step10: Bend the thumb at each line and define the knuckles as we did with the fingers.Create a finger nail with the sugar shaper as well.Attach to the palm as shown and smooth down the edges. Cut off any extra chocolate if it looks too bulky. Step11: Place a small amount of chocolate at the base of the palm to fill in the gap. Add more chocolate as needed to places that seem thin or not proportionate. Refer to your own hand often. Cut off the bottom of thehand and roll out a cylinder of modelling chocolate. Cut both ends and attach to the bottom of the hand. This is option but I wanted to show you how the hand would attach to the arm. Smooth out the seam. Add a couple of wrist wrinkles and smooth out as we did with the palm.

SUGAR ART MUSEUM Collaboration Sugar Art Museum is a collaboration featuring talented cake and cookie artists from around the globe. The brainchild of Bouchra Lyna of Sweet Creations Cakes (France), this collaboration's aim was to create a virtual museum filled with edible art. Lyna was joined by fellow cake artists Jonathan Theuma of JT Cakes (Malta) and Mila Jankipersadsing of Pure Cakes by Mila (The Netherlands), who assisted with managing the huge task of collating the pieces for the exhibition. The contributors were given creative freedom to create their pieces of edible art, with the only stipulation being that they feature a technique such as painting, sculpture or sugar florals. Some of the pieces were inspired by famous artworks and artists, including Gaudi, Gustav Klimt and Botticelli. The Sugar Art Museum exhibit can be viewed at www. sugarartmuseum.com

Who inspires you? I'm so inspired by so many people/ things. I get inspired by other decorators who push me to get better like Natalie Sideserf, Mike McCarey and Karen Portaleo. I get inspired by sculptors and artists like Forrest Rogers, Spiderzero and Glenn Arthur. Mostly I am constantly inspired by the world around me. Nature, fashion, jewelleryandPinterest!Oh,howIlove Pinterest. What advice do you have to cakers wishing to expand their sculpting skills? If youtrulywanttolearnhowto bea better sculptor, you absolutely must take a live drawing class or research anatomy. You can't sculpt something that you don't have an understanding of and you cannot correct your mistakes unless you can see them. Working from reference is extremely important whether it's an anatomy model or your own face in the mirror. If you talk to any sculptor, they will tell you the same. We're all just sculptors who happen to work in sugar instead of clay, so the same principles apply. You spent some time here in Australia in 2016 teaching. Do you have any plans to return? Australia is an amazing place! i never knew I would enjoy it so much and would love to return when my daughter is a little older so she can really appreciate the wonders we experienced! We camped a lot when I was a kid and spent a lot of time exploring nature and going to museums and feel like that really shaped me as a person.
