Step 4&5:Thefacedetails The mouth & tongue Cut out the cake by using the templates. Keep the blade as vertical as possible. Starting with a small amount of ganache, place the cake layers alternately with filling till complete. First use the egg shape layers, then the rounded ones. After stacking chill the cake for about 2 hours in the fridge. Roll out a small amount of dark red fondant very thinly. Place it onto the mouth section, smooth it out and cut off the excess. You can spray some water very thinly over the ganache to make it stick. Cover the whole face and the neck with a small layer of skin tone modelling paste and cut out the section where the mouth will be. Knead the excess of red fondant and a small amount of white fondant together to form the tongue. To texture you can use plastic wrap over the fondant and texture with the dresden tool. Make small impressions and a deeper line in the middle of the tongue. Place it into the mouth. Make the teeth with white fondant and attach. Step 6:The eyes To make the eyeballs, roll flower paste into balls and let them dry completely (make these about 5 days in advance so they have time to dry). To gauge the size of the eyeballs, each one should be one fifth of the size of the full width of the head. Cut the balls in half and place each one in the hole for the eyes.

Cont step 6: The eyes To paint the iris, use vodka and gel colour and apply with a very thin brush. To get a realistic effect, look at reference photos or simply look in the mirror at your own eyes. Step 7: The eyelids and under-eye area Roll out modelling paste, cut out a circle and cut this in half. Place it onto the eyeball to create the under eyelid area. Blend it in. Do it the same way for the upper eyelid and the other eye. Step 8: Lips Place a small sausage of modelling paste to create the upper lip and blend it in. Don’t forget to texture the lip - texture is always most important! Step 9: Face Apply more modelling paste to the chin, cheeks and the lips. Remember that children’s faces are much fleshier than adults. Step 10: Nose Form the nose by creating a sausage with modelling paste. To create the nostrils and nose wing, stick in a pointed modelling tool and pull carefully outwards. Step 11: Ears For children, the ears should be placed level with the middle of the eyes and middle of the mouth (when looking at head from the side). Roll modelling paste into an egg shape, pull a hole in and form with ball tool using c-shape indentations. Step 12: Hair Cover the head with a hood of light brown fondant mixed with CMC. Add volume to the hair by shaping drop-shaped pieces of fondant. Texture them with the dresden tool, shape them into strands of hair and attach them with edible glue. To keep their position when drying, paper towel is very helpful. The hair gets a more realistic look if you marble some beige and dark brown into the light brown fondant. For this I used my paste colour which I thinned out with alcohol.

You will need: Tools Materials • Your favourite cookie recipe shapes, baked and cooled. • Your favourite batch of royal icing. • Amerimist Colours (I use Super Red, Lemon Yellow, Leaf Green, Sky Blue and Regal Purple). • Americolor Super Black gel. • Scribe Tool. • Piping Tips (I use tipless bags, but feel free to use tips if you’d prefer. I’d recommend a size 2 depending on the size of cookie used). • Airbrush (you can hand paint with a paint brush instead). • Small offset spatula for stencil scraping. • Paint palette template. • Baking paper. • Stencil (I get mine from Say It With Sweetness). Step 3: Once paint transfers are fully dry, use an airbrush to spray on the Amerimist colour. You can also use a paint brush to paint the colours onto the swatches, but I find airbrushing is faster and gives me a more even result. Repeat with all colours you want to use, cleaning the airbrush in between colour changes. Set transfers aside and allow to dry completely. • Paint brush for the finished cookie. Step 1: Begin by making some cookies large or small enough for your stencil design. Outline and flood them using a medium consistency royal icing, using a scribe tool to spread icing across the cookie evenly and to get rid of any lump/bumps. Ensure that your stencil will fit onto the flooded area. Allow to dry completely (allow at least 8-12 hours). Step 2: While the iced cookies are drying, make the paint transfers. Step 4: Peel your coloured paint transfers off of the baking paper. If they are fully dried, they will come off easily and not leave any residue. Set aside. Outline and flood the remaining section of cookie using a medium consistency icing (this is where the paint transfers will go). Use a scribe tool to manoeuvre the icing and make it smooth. While the icing is still wet, place the coloured paint transfers directly on to the cookie. Allow to dry completely. Cont. step 2: To do this, place a piece of baking paper over your paint transfer template. Using a medium consistency royal icing, flood in the shapes (I use rectangles) and use a scribe tool to make the icing smooth. Allow transfers to dry completely (allow 8-

Step 3: Repeat with all colours you want to use, cleaning the airbrush in between colour changes. Set transfers aside and allow to dry completely. Step 5: Place your stencil on your completely dried cookie. Using a stiff consistency black royal icing, place icing onto the stencil and use an offset spatula to pull the icing across the stencil. Make sure the icing is spread evenly and covers all parts of the stencil design. Scrape off any excess, and then remove the stencil from the cookie by lifting it straight up. Set aside to dry. You will need: • Ball tool • Blade tool • Small scissors • Water brush • Soft brush Step 9: • White petal dust Snap the toothpick in half and insert into head where ears were positioned before attaching ears onto the toothpick and to the head with a touch of water in between ears and head. • Skewer x1 • Toothpick x1 • 6mm Sugar balls x2 • Fondant - 4 shades (dark brown, red/brown, light brown & grey) Step 12: Step 10: Step 11: Attach the limbs of the teddy to its body with a touch of water. Attach the ‘buttons’ to the teddy’s body with a touch of water. Insert the skewer down the middle of the teddy’s body before attaching its head over the skewer onto the body. Then dust the whole teddy with white petal dust to accentuate its fur. Step 13: Use the small scissors to make small fast snips multiple times to the teddy all over except for the ‘nose’, buttons and inside ears. We recently attended SoFlo Cake & Candy Expo in Miami, Florida, with a group of Australian decorators and businesses. Over 4,300 attendees from around the world came out to the Miami Airport Convention Center to shop for the weekend, and almost 2,000 of those attendees took classes with SoFlo’s talented instructors. During the expo, featured guest Yolanda Gampp, of How To Cake It, was on site signing books and hosted an Emoji Challenge stage demo with unsuspecting attendees from the crowd. In addition, special guest Sweetapolita, the sprinkle queen, collaborated with SoFlo & The Sugar Factory on a limited edition SoFlo Cake n' Shake, which will be available through the month of May.

SoFlo also hosted Jordan, an 8 year old baking enthusiast who is battling cancer and deserved a day of fun. Jordan was given the chance to judge the cake competition alongside Chef Nicholas Lodge and the esteemed panel of judges. Sachiko Windbiel, the owner of Mimi Cafe Union, gave him a special one on one cake sushi making class. After his private class, Jordan had the opportunity to sit on stage during Yolanda Gampp's Emoji Challenge. Jordan, his mother, and little sister spent the day at SoFlo learning new baking techniques and checking out what the vendors and teachers had to offer.
