You will need: • Large Santa-shaped cookie • Twine and a jingle bell • Oval-shaped cookie • Black edible pen • Christmas quote, printed (search online for templates) • Christmas design (flowers and decorations) • Powder colours: pink, red, eucalyptus, yellow, citrus green, moss green, Christmas green, brown • Piping bags • Paintbrushes: flat, small round, dusting brush • White royal icing for flooding Step 7: • Scribe Step 6: You can also draw a quote of your choice freehand directly on the cookie. Step 9: Step 10: Step 11: Step 12: Trace the Christmas decorations again, using the same technique used in step 5. Put out the colours on a paint palette and mix them with a few drops of vodka. Start paint-ing, using a paper towel to dab off excess liquid. Write the ‘Be Merry’ quote with the black edible pen. Let the painting and pen marks dry completely. Apply a coat of red royal icing of medium consistency to the oval cookie with the flat brush, covering the entire cookie surface (edges too). Now, trace the Santa silhouette on another piece of parchment paper and start drawing freehand flowers and Christmas decorations, using a printed illustration as a reference. Step 8: Place the pencil-side down on the cookie, making sure that you can adjust the drawn sil- houette on the cookie. • Parchment or baking paper Step 1: Step 2: Step 3: Step 4: Cut out a Santa shape and an oval shape and bake them as usual. You can use a cookie cutter or a paper pattern if you prefer. Coat the Santa cookie with white icing of flooding consistency. Use a scribe to flood the entire surface of the cookie. Let the royal icing dry completely (about 8 hours at room temperature or 60 minutes in a dehydrator). Print the reverse image of your chosen quote (using a photo editor program like Photoshop) and trace it with a non-toxic pencil on parchment or baking paper.

Step 1: Prep sugar flowers. Take a heavy gauge wire, fold in half and twist with pliers to create a sturdy stem. Poke a hole into a small styrofoam ball, fill with low temp hot glue and push in wire to create the base of a sugar protea. Step 2: Step 3: Step 11: Paint the bottom half of the ball in sugar glue or water, then cover in gumpaste. Smooth. Use a protea flower image for reference. Cover the top half in fondant. Add texture using a veining tool and a small knife, starting at the centre and working outwards. Step 4: Step 9: Using small scissors, snip at the fondant to create more texture. Step 5: Step 6: Step 7: Thinly roll and cut out gumpaste using a petal/ leaf cutter and store in plastic bag while prepping petals. You’ll need approximately seven. Refer to images 11 & 12 for reference to prepping petals. Set aside on gently curved surface then dust with a little pink and yellow petal dust. The first layer of petals can be lightly brushed with sugar glue on the bottom half of the petals and arranged around the protea bud. I add royal icing where I can to give added strength. Hang protea upside down to dry. Remaining protea petals are wired. Roll gumpaste thinly on the cellpad. Peel gumpaste off cellpad, turn over and cut petals. Cut at least 21 petals. Dip a 24 gauge wire into sugar glue, then thread the wire into the vein of the petal. Thin the edges of the petal with a ball tool on a firm flower pad. Roll ball tool into centre of petal to cup the petal. Lay on a gently curved surface to dry. Step 8: Step 13: Step 14: Step 15: Step 16: You can dust the outside of the petals or wait. The remaining petals will be wired to give more space, flexibility and fullness to the protea. Once petals are dry, dust with pink petal dusts with cornflour to soften the colour and begin taping to the protea bud with floral tape. Alternate the petals and give a bit of space between petal layers. This is a stylised version of a pink protea – a little green and yellow on the outside of the bud is nice. When finished, steam the flower. A variety of the petal dusts I used. Dusted foliage leaves. I used white gumpaste so I could play with shades of green. Green gumpaste would also work well. I cover a dummy the size of the cake with baking paper, smear on shortening and stick on ornaments to dry. This ensures they dry with the correct curve. Just start experimenting by putting on colour and even taking away colour with your brush. I added some black Sweet Sticks Edible Art paint and some gold detailing. I then sprayed the ornaments with a clear edible lacquer to give them a porcelain feel. Prepare your cakes with ganache and fondant. Stack the cakes using dowels for support. Creating the ribbon and bow. Once the loops of the bow are firm, stick in place with royal icing. Add the ends of the ribbons, cutting to desired length. Add a smooth ball of fondant, shape to fit, and use a sugar shaper or similar modelling tool to give the knot shape. Position ornaments and apply royal icing to the back. Draw lines with a ruler onto the cake and paint with black gel or paint. Using pliers to hold stems and a pointed tool to poke holes in cake, start to play with your sugar flower arrangement. Use cut straws or flower picks to hold the stems within the cake and royal icing to fill the gaps. Step 2: Step 1: For the purpose of this tutorial I’m using cake dummies but the same process applies to ganached cakes. At this stage keep the two cakes separate, we’ll stack them later. The bow will take a day or two to dry so we’ll start with that first. Add some tylose to the green fondant and mix it in well. Using the x-acto knife, cut out a rectangle approximately 12cm x 5cm (3mm thickness). Step 5: To create a pleat in the bow loop, first fold the edges down (as shown). Step 11: For the middle of the bow, cut out a rectangle approximately 7cm x 2.5cm (3mm thickness). To make this bow look as realistic as possible, we need to create some more movement. First fold the rectangle in half, lengthways. Then fold the top and bottom back to create a pleat-like fold. Apply a little sugar glue to the back of the strip and wrap it around the middle of the bow. Step 13: Step 14: Step 15: Step 16: Secure the ends at the back of the back of the bow. Step 25: Step 17: Next we’ll make the reindeer sugar cookies. Roll out a little ivory fondant and use the 2cm circle cutter to cut out the circles. Allow the circles to dry. To make the reindeer antlers, add tylose to the brown fondant, mix it in well and roll out the brown fondant to a 2mm thickness. Use the snowflake plunger to cut out two snowflakes. Apply some sugar glue to the back of the antlers and attach them to the top of the reindeer sugar cookie. Use the edible black marker to create eyes and for the nose, roll a tiny ball of red fondant. Step 26: Secure the nose in place Use the x-acto knife to cut with sugar glue. Three off the ‘antlers’ from the reindeer sugar cookies snowflake. were used for this cake. Step 27: So that the pleats will sit neatly behind the bow, use your finger to gently flatten the pleats. Trim off some of the excess pleats. To add movement to the tails, roll up some paper towel and pop it underneath. Curl up the ends a little. Pop them aside to dry. Step 18: Next we’ll make the treats that Mrs Claus offers in her bakery. To make the candy canes, roll a long sausage of red and white fondant. Twist the two together, curve the top part around and trim off the bottom. This cake has three candy canes. Step 19: For the macarons, start with a small ball of green fondant. Use your finger to flatten it slightly. Brush a small amount of sugar glue around the outside of the flattened circle (just around the base). Roll out a thin sausage of fondant and adhere it around the circle. Trim off any excess. Step 21: Step 22: Step 23: Step 24: Step 28: Step 29: Step 30 & 31: To create the ‘feet’ of the macaron, use a toothpick to make tiny dots in the fondant sausage. Use the same above steps to create a second macaron shell, so now you should have a top and bottom. For the filling, roll a small ball of white fondant and use your finger to flatten it. Apply a little sugar glue to the middle of the macaron shells and place in the white filling. Use your finger to encourage the filling to come to the edge of the macaron. Pop on the top shell and now you have a tasty- looking macaron! I found cutting the macarons in half made it easier to attach them to the cake later on, that way they aren’t so bulky. I made about 3 macarons for this cake. For the shortbread stars, roll out a little ivory fondant and use the star plunger to cut out 3 or 4 stars. Give the outside edges a light dusting with the brown petal dust and use the toothpick to add some dots (this is to act as the fork marks in shortbread). Repeat the process for the shortbread hearts. Since it’s a bit chilly in the North Pole, we’ll add a few snowflakes. Add some tylose to white fondant and mix it in well. Roll it out thin and use the snowflake plunger to cut out 3 snowflakes. Pop them aside to dry. Next we’ll create the Mrs Claus’ Bakery text on the front of the cake. The font I used is called Bromello. I was able to download it to my computer for free. Work out how big you need the white fondant oval for the front of your cake (mine is approximately 13cm tall), then use a pencil to trace the words Mrs Claus’ Bakery on to the front of the baking paper, ensuring the text fits neatly inside the oval. Take some white fondant, roll it out to approx. 2 -3mm thickness, place the oval template on top and use the x-acto knife to cut it out. Brush a light layer of sugar glue on the back of the oval and then adhere it to the front of the cake. Line up the baking paper with the white oval and use the dresden tool to score over the outline of each word. The fondant underneath is still soft so just apply a medium pressure with the tool. Step 35: Step 36: Step 37: They’re a little light/faint at this stage so take the dresden tool and go over the outline of each word again. Use a smoother for any bumpy parts on the oval. Each word will now be more defined. Step 33: Remove the baking paper and you’ll see the words embossed in the fondant. Next it’s time to arrange Mrs Claus’ treats around the words. Apply some sugar glue (or piping gel/ royal icing if you prefer) to the back of each item and adhere them to the cake, following the outline of the oval. Step 38: Step 39: Now it’s time to make the words stand out and paint them gold! With the Edible Art paint, just give the bottle a shake and paint it straight on. Go slow and steady and stay within the lines. Now the cake is starting to come to life! Step 42: Step 43: Continue all the way around the oval until you’re back at the start. Next we’ll add the top tier. Add a small amount of royal icing to the top of the 6” cake and place the 3” cake on top. The royal icing will help ensure the two cakes stick together. Once the bow has completely dried, it’s time to attach it to the cake. First, add some royal icing on the back of the bow and a little on the pleats of the bow tails. The Christmas Candle Cake Step 1: Enrobe a 6” cake with fondant. Set aside. Step 3: Knead and roll to a ball twice the amount of what you would consume to cover the top. Step 2: Take a tealight candle and wrap the case with aluminum foil. Step 4: Roll out fondant starting from the sides to create what would look like a little hill. The height of the hill is based on the thickness of the tealight case. Step 5: Use the tealight case to measure the diameter of the hole you are going to cut out from hill. This will look like a volcano. Step 6: Lightly brush the top of the cake with a little water and place the rolled out fondant volcano on top of the cake. Step 7: Smooth the sides of the cake shoulder and pinch the excess to create drips. Step 8: Brush with desired lustre or pearl dust to create a shimmery effect on the cake.

Step 17: Take 30g of the prepared marzipan and roll on the palm of your hands. If it comes out sticky, you can rub your hands with a little shortening to prevent from sticking on your skin. As you roll, slowly bring it to a teardrop shape. Step 19: Take a clove stem, dip the rounded top in corn syrup and stick it on the marked top of the marzipan pear. You can brush the marzipan with petal dust in shades of yellow, light green and red, or pearl dust diluted in little vodka to make it more festive. Step 18: Smooth the pointy tip and make it bit rounded. With the tip of a dresden or dogbone tool, put a light hole on the top. Step 20: Place cake on a decorative cake stand and arrange leaves, berries and marzipan pears around the cake candle. Insert tealight on the hole and light it up.

Lift the wire above the cake board as this will be the wooden log that’s anti-gravity.

Creating the Koala in Cake Step 3: Use gloves for this part so it won’t be so messy on the hands. Heat your hands, mix through 200g of marshmallows, 1/4 cup of white chocolate in the rice pops in the the microwave until it has melted. Then add 200g of melted marshmallow mix rice pops to it. until it is well combined. Let the RKT cool down a little before using it on the structure. Use some melted marshmallow on the armature wire so the RKT has something to stick on. Apply RKT little by little along the wire on the cake board to create the “log”. If it’s starting to fall off the structure, do not fret and just try to hold it together. Step 25: Step 4: Step 5: Step 6: Cover the rest of the cake board with aluminium foil too, it doesn’t have to be smooth so the more creases, the better. Apply melted marshmallow or chocolate underneath the cake board and add RKT to the bottom of the lower cake board. This is the bottom part of the torso of the koala. Once you are happy with the overall shape of both the torso and the log, use cling wrap and wrap around the RKT so it holds it in place and doesn’t fall off. Let it set overnight before working on it. Add cake to the rest of the structure. Apply ganache at the bottom of the board, and build cake layer by layer. Roll it into a ball, and then into a cone - this will be the koala’s ‘left leg’. Gently shape the thinner end of the cone to create the koala’s ‘feet’. Place them on the lower half of the face, and have them both aligned so you can decide where you like them. Use an end of a paintbrush or a Cel stick to create indents where you can add the eyes, and add the eyes in. Roll out a 20g piece of black fondant to make the koala’s nose, thicker at the top and slightly tapered towards the bottom. Place the nose on the same level as the eyes. To create a cute smile, use your thumb to gently press against its right cheek, then use a Sugar Shaper or a dresden tool to create a smile. To create its ears, use 200g of the original grey fondant mix and add about a teaspoon of CMC powder to it. Use the fleshier part of your palm and slowly smooth and flatten the fondant. Roll out the lighter grey fondant and cut out a circle with a 6.5cm diameter round cutter. Smooth the sides around the circle and attach it to the ear with some water. Let this firm up for a few hours, preferably overnight. Place the ‘leg’ through the armature wire, and you have his first leg! Step 24: Mix equal amounts of white fondant to the grey fondant mix, to create a lighter shade of grey. Roll out the fondant to approximately 2mm in thickness, and place that on the koala’s belly.

Roll out very thin sausages of black fondant and place it on the koala, creating its eyebrows. You can have them as rounded or adjust it to any expression you like. Cover the other side of the wire going into the cake with aluminium foil tape. Attach the left arm, and with some water to stick the arm to the body. Make an L shape with the other wire, and roll out same amount of fondant with CMC powder and shape the right arm through the wire. Attach it to the body.

Making the Wooden Log Step 7: Step 1: Ganache the RKT to create the log, it doesn’t have to be a smooth finish. Step 2: Roll out about 500g of Ivory fondant, and then apply it on the log. Make sure to cover the underside of the log that’s raised above the cake board. Step 5: Step 6: Make them into thin sausages and twist the fondant several times to create a marbled effect. Roll the marbled fondant out and leave it exposed for several hours to achieve crackling effect. If you want to speed up the crackling effect, use a blowtorch and run it all over the top of the fondant. If it starts to blister and caramelise, that is perfectly fine as it will add to the wooden effect. Step 3: Step 4: Step 8: On the ends of the log, slowly flatten and pinch the edges. To create the bark of the log, make a few colours using the leftover Ivory fondant, some are mixed with the Teddy Bear brown, some are coloured using Progel colours - Chestnut and Brown. Finish Cake Board Step 1: Spray the log lightly with water and apply the crackled fondant over. If it doesn’t cover the entire circumference of the log, that’s ok. The fondant may start to tear as well, which is perfectly ok. That adds to the character of the log. You can always go back with the blowtorch to add more colour, depth and definition on the log Use masking tape and tape around the cake board. We will be filling the board with isomalt later and this will help prevent overflowing. Roll out some black fondant into tapered strips and cut out three strips to make its claws. Place them over the ends of the arms with the hook to conceal them. Take extra precaution with this step! Double gloves are necessary in this step! Melt about 1000g of isomalt in the microwave in short 30 second bursts until they have melted and are flowing. Use a tiny bit of Progel blue and colour the isomalt. Gently pour the melted isomalt all over the cake board to fill it up - if you feel the isomalt is not flowing as smoothly as before, just put it back in the microwave for a few seconds again, and continue pouring. Aixa Zunino interview with Spanish and Australian cookie decorators, it is the size of the cookies and the frequent use of hand painting techniques. I love teaching, as meeting new students makes me want to challenge myself, learn new things every day and improve my skills to share with them. You push the boundaries with your designs, creating 3D and hanging cookies. How much planning goes in to these designs? So Sweet To Hear: An Interview with Aixa Zunino of Dolce Sentire Written by Kellie Rudland Aixa Zunino of Dolce Sentire is fast becoming one of the biggest names in the cookie industry. Known for her intricately hand-painted designs, Zunino uses cookies as her canvas. We caught up with her to chat about the evolution of Dolce Sentire and to grab some tips on how to create the perfect cookie. You began Dolce Sentire in 2012. How did you discover cookie decorating? I had never planned to start in the world of cookie decorating. I remember when I was a little girl I was very curious and I really loved everything about sweets and treats. My two grandmothers loved to cook and bake so they shared with me everything they learned from their own mothers. That’s probably the reason why I discovered decorated cookies by chance. It was in 2012, I was living and studying in Sardinia (Italy) and I used to spend part of my leisure time watching a sugarcraft TV show hosted by a very talented Italian cake design artist, Renato Ardovino. That’s how I knew about all the possibilities cookies could offer. You currently reside in Spain. Do you think there are differences in styles between Spanish and Australian decorators? If there is something that I can highlight as a difference between I don’t use to plan a lot in advance my cookies. Actually, I follow my heart when I want to create. I just think what I want to render into a cookie and start looking for some inspiration, meaning shapes, colours, techniques, textures, finishings… that takes me about one day. Once I have an idea about what I want to create, I just begin decorating, trying not to be under pressure and open to change all the design if it’s necessary. Decorating process may take one or two days more. You tend to combine painting and piping in your cookie designs. Do you have favourite brushes you can recommend? I do only use round quality brushes. Sable hair brushes (eg Kolinsky sable) make the best choice for cookie painting and, if you properly care for them, will maintain their shape and texture for long time. If you don’t want to spend too much, some high quality synthetics (nylon or polyester) can also do a great job. What are your top three tools for creating amazing cookies? Paintbrushes, scribers and piping bags. Have you had any cookie fails? Of course I have! Actually, I keep on failing sometimes. Cookie fails force Your work is so detailed and flawlessly executed. Do you have an art background? What were you doing before you found cookies? In my “past life” I was an agricultural engineer. Do you have any plans to come back and teach in Australia? I was teaching in Melbourne and Sydney this year and I really enjoyed it! My students were so adorable and I had a very pleasant time there, even if I couldn’t visit too much. It would be great to back again soon! What are your three tips for beginners learning how to decorate cookies? 1. Don’t go crazy with the different consistencies of royal icing. Mastering them is something that takes some time, especially if you never use it on your cookies. 2. Relax and enjoy the learning process without worrying about the outcome. Remember: every fail helps you to improve yourself and achieve your cookie goals in the future. 3. Be patient and keep on practicing. Don’t stress yourself if something went wrong…never give up! Where do you find inspiration for your cookie designs? I used to look for inspiration at Pinterest or Instagram. Who are your cookie idols? I have a lot of cookie idols but I especially love the art of Julia M. Usher, with her intricate decorations, the cuteness of SweetAmbs’ cookies or the amazing paintings that Evelindecora creates on her cookies.

ACDN Member Spotlight Penny Bunz of Cleopatra Cakes My name is Penny Bunz and my business is Cleopatra Cakes. My passion is creating cakes that are artistic, detailed, a little quirky and delicious. I love colour, art and music,exotic cultures, offbeat humour and subject matter, which usually influences my creations. I hail from the Great white north, Canada that is.
