letter from the editor Welcome to our first edition of Cake! magazine for 2019! I hope you all had a relaxing and enjoyable break over the Christmas and New Year period. This issue of Cake! Magazine is all about florals! We feature tutorials on sugar flowers, painted flowers and wafer paper flowers, as well as interviews with 2 of the world's leading sugar flower artists Jacqueline Butler and Robert Haynes. See our feature on the 2018 Cake Decorating & Baking Industry Awards Night winners on page 33 of this issue. We had a fantastic night celebrating with members of the cake decorating and baking industry. We look forward to our 2019 Awards Night planned for November 2019. Our Cake Camp is back this year! August 2019 will see 60 Cake Campers heading to the gorgeous Blue Mountains (Sydney) for a weekend of cake, networking and fun! See page 24 to add your name to the expression of interest list! Floral Fashion Embroidery By Zoe Clark from Zoe Clark Cakes You will need: Materials • One 10cm (4”) round cake by 12.5cm (5”) deep • One 15cm (6”) round cake by 14cm (5.5in) deep • One 22cm (9”) square cake by 14cm (5.5in) deep • All iced in black fondant • 500g stiff-peak royal icing • Gel/paste colours – black, pink, green, brown • Pearl lustre • Clear alcohol • One 12” round cake board (acrylic or other) • Cake dowels • Floral Stencil (I used the Gardenia Lace Stencil and Gardenia Lace Medallion Stencil by Evil Cake Genius) • Masking tape • Pins to hold stencil in place • 4-5 small paper piping bags • Wilton piping tips #1 and #102 • Medium fine paintbrush

Step 4: Step 2: Step 1: Start by stencilling the floral background design on to the cake. If your stencil is quite detailed you can mask off areas with masking tape to reduce the density of the pattern as I did here. If you are using a stencil which has a big gap at the bottom of the design you may need to raise your cake up on a sturdy platform, slightly smaller that the size of the cake. Make sure it isn’t going to move and use non-slip mat if necessary. Step 3: Wrap the stencil around the 9” tier. Hold it in place with some pins either side. Try to make it as tight and as flat against the cake as possible. Mix some black paste colour into two tablespoons of royal icing until you have a dark enough colour. You want the consistency to be fairly stiff but spreadable. Cover the bowl with some damp paper towel or cloth to prevent it from drying out while you work. Step 5 - 7: Use a palette knife to carefully apply the icing to the cake. Work from one side to another taking care not to allow the icing ooze under the pattern. Once you’ve covered the entire area, remove the pins and carefully remove the stencil. Wash it and dry it, leaving on the tape, if using. Continue stencilling around the cake. With this particular stencil, there isn’t any need to make everything match up perfectly, as the floral embroidery design on top hides any imperfections. It’s best to wait for the icing to be dry on the cake before moving onto the next section to avoid any smudging. Set the cake aside, then stencil the pattern onto the 6” tier. Continue cleaning the stencil and palette knife off after each use.

Pipe out a small curve/petal of icing and drag it inwards, towards the centre of the flower. Keep the petals tight/thin and fairly long. It doesn’t matter if the icing doesn’t reach the centre though. After piping put a few petals, use a damp paintbrush to brush down the icing and bring it into the centre of the flower, like the brush embroidery technique. Work on the next section of the flower. The quicker and more confident you get, the more petals you can pipe and brush at one time. Work all the way around the flower. You can turn the bag and even reverse pipe (work in the opposite direction) if you like. You can vary the size and length of the petals if you wish to vary the shape of each flower.

Step 16: Tip: Practice this technique on a flat surface, ideally on a piece of fondant, before trying on the cake. Pipe all the white flowers then move onto the pink ones. To make the pink paste, mix some paste colour into the royal icing and add a touch of brown just to make the colour more muted. Aim for a medium pink tone. Step 23: Step 20: Colour two tablespoons of soft-peak royal icing using green paste colour, and fill a piping bag fitted with a #1 piping tip. Pipe in a few vines by dragging the tip of the bag close-to the surface of the cakes. It doesn’t need to be perfect lines. Pipe the leaf outlines. Use the damp paintbrush to brush the lines inwards down towards the base of each leaf before piping the next one. Step 24: Step 25: Pipe a few more final petals in the lightest shade of pink or straight white. Finish off the flowers by piping some small dots in the centre. Using some pale brown coloured soft-peak royal icing and a #1 piping tip. Pipe in the veins on each leaf. Mix a small amount of pearl lustre with some clear alcohol and paint over the piped dots and leaf veins to finish. Step 21: Step 22: Build up the design until you are happy with the amount of leaves and vines. You can always add more later on. f www Mix up a lighter pink shade and pipe the next layer of petals in on the larger flowers and pipe in some smaller blossoms and individual petals on the vines. Wafer Paper Magnolia By Sylwia Sobiegraj You will need: Equipment • Brushes • Fine scissors • Petal template • Dresden tool • Veiner tool • Wafer paper (thickness 0.27mm) • 33 and 24 gauge floristry wires • Petal dust in deep rose, brown, olive, vine • Green floral tape • Flower paste (4g) • Floral stamens • Clear alcohol

Step 1: Roll a ball of white flower paste, then shape into an elongated cone measuring approximately 3cm. Push a hooked 24 gauge floristry wire into the wide end of cone. Step 2: Step 3: Step 4: Use fine scissors to make tiny cuts around the cone. Leave to dry. In the meantime cut six petals from wafer paper. Cut two 33 gauge floristry wires into thirds. Step 5: Step 6: Step 7: Step 8: Brush the one side of the base with clear alcohol. Place a wire on the top and cover with the other side. Press well to stick together, leave to dry. Brush the edge of petal with clear alcohol on both sides, very gently. Gently turn inside out the edge of petal using veiner tool. Cut the base of each petal to approximately 1/3 up to the centre.

Step 19: Colour sepals using a selection of green and brown mixture. Cont. step 20: Repeat with all the sepals and set aside to dry, but not completely. Perfect Peony By Greg Cleary of Sweetums Designer Cakes This is a quick, very showy flower that has loads of impact with little effort required. It fills space quickly and does not need a lot of other accompanying flowers as it stands alone as a beauty. It’s that old ‘less is more’ motto. You will need: Materials • White wire (20, 26 & 28 gauge) • Peony leaf veiner or dresden tool • Flower paste • Petal cutters (two graduating sizes) • Florist tape • Peony leaf cutters • Dental floss • Peony petal veiner and veining tool • Stamens • Balling tool • Wire cutters • Petal pad

Centre – For Bud • Cut a piece of 20 gauge wire and make a hook on the end. • Roll a marble-sized ball of paste into a ball and attach to hooked wire. • Allow to dry. • Cut three petals using the smaller cutter. Vein and frill, attach to dried marble, being sure to completely cover dried centre. Stamen Centre • Take a small pea-sized ball of paste and roll into a teardrop. Insert a hooked 28 gauge wire into base, repeat and make two more. Glue three pieces together, pinching outer edges to form triangle shape. Tape together and curl back ends of teardrops. • Take one bunch of fine stamens and divide into three bundles. • Squeeze a small amount of high tack glue in the middle of the stamens, allow to become tacky. • Cut in half and while still sticky attach around prepared dried centre. First Layer • Roll out paste thinly and cut out five petals, using smallest petal cutter. • Insert hooked 26 gauge wire. • Place in veiner and vein heavily. • P lace back on board and using veining tool, work petal to make it larger and ruffled on the outer edge. Keep petals irregular in shape and texture to add interest. • R epeat with the four remaining petals and place in an apple tray to dry. Flick some of petal edges to add texture and interest. Second Layer • Roll out paste on grooved board and cut out 10 petals using next size petal cutter. • Insert moistened 26 gauge wire into petal. Vein and dry petals as you did for the petals in the first layer. Leaves • Roll out green coloured paste on grooved board and cut out leaf shape. • Insert a moistened 26 gauge wire. • Ball edges of petal and place in veiner and vein heavily. • Pinch in central vein and allow dry. • Leaves are a deep green with a red/aubergine edge. • Leaves can be dipped into 1⁄2 strength confectioner’s glaze if desired. • Wire in groups of 3 to add to completed flower. Leaves First Layer • Tape two petals opposite each other on prepared stamen centre, add remaining three petals underneath. Second Layer • T ape remaining 10 petals around previous layer, adding in no particular order to make the flower look natural. Two rows of five petals works well. Colouring • I t is best to source a picture of a real peony to get an accurate idea for colouring. I dust or air brush a deeper colour at base of petals for depth. I then add highlights of colour on some of the petal edges, also adding touches of soft green here and there on pastel shade flowers. You can also add deeper highlights to petal edges for realism. Jacqueline Butler interview with Beautiful Blooms – an interview with Jacqueline Butler of Petalsweet Written by Kellie Rudland Jacqueline Butler is known the world over for her delicate pastel blooms and tiny filler flowers. We chatted with Jacqueline about her move from cake artist to floral artist, and what’s next in the Petalsweet world. When we last interviewed you in 2014 your business focused on wedding cakes, but you’ve now shifted to solely creating sugar flowers. Was this a daunting transition to make? It was in the beginning! But I was getting a lot of requests from lovely folks wanting to learn how to make sugar flowers and I found I really enjoyed teaching. For a while I was doing cakes and teaching at the same time, but it just became too difficult to do them both and do them well, so I took the chance on teaching and I’m happy I did! Occasionally I will take on a custom sugar flower order for a special project, and these help me push myself to try new things. Do you ever miss creating cakes? I still create a few cakes here and there for family, friends and some wonderful long-standing clients, but I don’t miss making them full time. I would love to have more free time to

just try all the beautiful techniques artists are using now with painting, textures and buttercream. Creating cakes on a weekly deadline can really push you to expand your decorating repertoire quickly, which is something I miss! way that can then be easily recreated. From a teaching perspective it can be difficult for students to be successful if a process is vague or requires “just having a good eye” for what looks pretty. So, I think roses will continue to be a work in progress! What tools could you not live without? Pasta machine for rolling paste, metal ball tools, Dresden tool, small embroidery scissors, foam pad, and a groove board for making wired petals and leaves. You’re now a published author, Craftsy instructor and globe-trotting teacher. What’s next for Petalsweet? I’m excited to share I’ve just finished my second book, Modern Sugar Flowers Volume 2, which will be coming out this fall! It’s filled with a lot of new flowers and some fun new cake projects and designs. I have been a total hermit, holed up at home working What is your favourite flower to make? My obsession with the ranunculus flower continues! While not the most impressive or showy, there is something about the shape and multitude of delicate layers in a ranunculus that keep me coming back for more. My own version has evolved SO much since I began making them in 2010, and it’s the flower I like to work on the most when I have time to play. We have beautiful ranunculus flower fields here in San Diego and they are incredible inspiration each Spring. I’m also focusing on more roses since they continue to be so popular for cake makers and their clients. on it all summer and just finished the final photoshoot in January. What floral trends do you see being popular over the next year? I think sugar flowers artists are increasingly inspired by the many incredible florists and flower-growers sharing their beautiful work online. This year, lots of greenery, shades of ivory, brown, yellow, orange and coral, and new colors of familiar flowers will be popular. Also, looser arrangements with a moody, organic feel with flowers that look more realistic, as well as flowers that are past their prime (imagine brown edges and petals about to fall off), and darker cake surfaces as backgrounds. Admittedly some of these floral trends are challenging for me as my eye is drawn to pure soft colors and fresh looking, tight flower arrangements. But I’m loving the greenery trend and am using new color combinations outside of my usual pastels, so I’m taking it one step at a time!

What advice can you give to decorators wanting to improve their flower-making skills? I highly recommend a hands-on workshop if you are wanting to improve your flower-making skills. My best learning experience occurred many years ago when I invested in a private workshop with a sugar flower artist I admired. I learned a great foundation in techniques, which then gave me the confidence to try making new flowers on my own and then also develop my own style. When you are comfortable using the tools and supplies and understand how they all work, it opens a whole new world in creating well- crafted sugar flowers. Once you have developed good technique, all the online classes and books are also much easier to follow, and with better results. Also, lots of practice! Robert Haynes interview with Man About Florals – An Interview with Robert Haynes of Sugar Flower Studio Written by Kellie Rudland Dedicated, meticulous detail is what makes Robert Haynes’ sugar blooms immediately recognisable. Delicate, intricate and botanically correct, his florals are true works of art. We chatted with Robert about his love for sugar flowers, his design process and what’s next for his business. Tell us about how you made the leap from working as a chef in fine dining establishments to creating sugar flowers full time. I have been making sugar flowers since I was 13. I went to college to be trained as a chef. After working my way up through the ranks and finally moving down to London, I decided to attend a sugar show, where I showed a few interested ladies from the British

Sugarcraft Guild a few pictures of my work. One of the ladies invited me to conduct a demonstration at her home, and shortly after this I was invited to attend their teacher training course. I was accredited by the BSG soon after as a certified teacher. I started teaching internationally, and it became quite apparent that I could make a living from the demand for classes. I haven’t looked back, I enjoy cooking, but my passion is the art of recreating something out of sugar. I love what I do. You began as a self-taught artist, but do you find yourself training with others in the industry these days? I started making sugar flowers 37 years ago, and all I have done is practice practice and practice a little bit more. Go ahead and take lessons from a different spectrum of teachers, then mould yourself with a style all of your own. We all learn from our mistakes. If the flowers we made in the beginning were perfect then there wouldn’t be any room for improvement. I want to get to a stage where I can’t tell the difference between a real rose and a sugar rose. I have a long way to go. I love to share my techniques. This is why I am a teacher - I want to share all that I know. When I teach, I don’t hold back any techniques that would make my flower better than the students’, no! I love to see the sheer joy on their faces when they achieve results like mine - it makes me so proud. I have started to attend other teachers’ classes, purely to see their style of teaching as I find this fascinating. Every day we learn something new. I love the feeling when I haven’t made a and suggest using in the book. For example, my brand of flower paste, edible dust colours and range of tools. Do you ever create ‘fantasy’ flowers or is it important for you to stay true to your style? I am continually expanding my range of botanically correct silicone veiners and cutters. I love making new moulds. It’s so rewarding after the countless hours of hard and tedious work to see the end product, then using it to recreate Mother Nature herself. I adore the process and feel extremely proud so far of what I have managed to recreate in silicone. What are your three favourite tools for creating sugar flowers? I would say that in some classes I need to alter the formation of a flower, for example a peony. It’s impossible to recreate exactly the structure of the real plant species in the allocated course time; however I do explain and cover the procedure in the masterclasses if students were going to recreate that particular flower for a competition piece. Firstly, always use botanically correct veiners to achieve the best and most natural results. Secondly, my thumbs! People who have attended my courses will know why thumbs are so important! I advise to use corn floured thumbs and fingers to go around the edges of any leaf or petal to thin the paste first before using a ball tool. And lastly, I always use a large metal ball tool, as this helps stretch the flower paste without adding so many ruffles. Tell us about the design process for your range of botanically correct cutters and veiners. Do you have any advice for decorators wanting to improve on their sugar flower skills? When I decide on a new species of plant to replicate as a two-part mould, it needs to pass a rigorous grading process first. I choose each petal, leaf, bud, flower centre, fruit, nut, bark or shell with the utmost care and specification. Qualities I look for in each specimen are the contours, shape, vein structure and size gradients. Do you have plans to publish a book in the future? I must admit, one day there will be a book. I had a thought last year that it would be sensible to write and publish a book, when all of my key products are available for me to cross reference • A lways knead your flower paste and get it really warm to help the length of time you can work with it • C ut your floral wire at an angle - this helps to insert the wire much better into the flower paste. • R epeat, repeat, repeat. It will get better and better the more you practice.

What’s your favourite medium to work with? Do you prefer a pre-made florist paste or do you make your own? I am actually having my own brand of flower paste developed at the moment, and we are so close to perfecting the finished paste. It’s very exciting. I would say the last batch of trial samples were outstanding. I have never used a paste which is perfect in every sense of the word, however the paste I will bring to the market will be just that. Though you’re based in the UK, you spend much of your time teaching internationally. Do you have any plans to visit Australia soon? duck orchid, to process each part into silicone. How can I stand out in the cake crowd? I feel like my cakes look the same as everyone else. - Anastasia I completely understand how you’re feeling! The key is not be- ing afraid to experiment. Teach yourself to be ok with making mistakes and take that leap of faith to try something daring and different to the norm. Creative growth can be hard at times, but it’s SO rewarding. Make sure to also brainstorm and seek out inspiration from other industries. For me personally, I find that seeking inspi- ration from other cake decorators actually stunts my creative thinking. How can I quickly perfect my cake decorat- ing skills?". - Kayla Hi Kayla, Firstly, please don't be too hard on yourself - ev- eryone learns at their own pace, and usually, we are our own worst enemy when it comes to critiqu- ing our work. Ultimately though, it takes time to de- velop your skill set and to perfect your decorating techniques - it’s not something you can fast track. It really is all about 'practice makes perfect', it's just knowing where to start! I struggle with picking colours for my cakes, any tips? - Stefanie If you don’t trust your own judgement with selecting colours, rely on the ba- sics of colour theory to help you. It all starts with the colour wheel! You can use the colour wheel to understand the context of colour, discover colour harmonies and ultimately have ac- cess to the go-to formulas for those perfect colour schemes. Mastering the basics of cake decorating is 100% the key to success. It’s common for people to try and rush through the basics so they can learn more interesting cake techniques - this is ultimately their downfall.The main difference between professional and amateur cake decorators, is that the profes- sional is much more adept at basic skills which are fundamental for success in cake decorating. Take your time to REALLY learn the basics. You'll start to notice that your work will look more fine tuned and polished. Once you've aced the basics, you can dedicate more time to learning all those fancy cake decorating techniques you've been dy- ing to try! Investigate different types of colour schemes and allow the colour wheel to guide you. A three colour com- bination is a good starting point for creating a varied and interesting co- lour palette. Hot tip: ‘Split Complementary’ is the perfect colour scheme choice for beginners - it always looks good and it’s hard to muck up! ASK A QUESTION! ACDN Member Spotlight Amy Chapman of Inspired Cakes - by Amy My name is Amy, I am the artist and owner of ‘Inspired Cakes – by Amy’. My longstanding passion for creating art and sculpture lead me to undertake a degree in fine arts. After having my children I remembered how wonderful it was when my own mother would make special birthday cakes for me and set out to make memorable birthdays for my own children. Along the way I discovered my passion for cake art. The overwhelming response to these cakes for my children prompted me to launch “Inspired Cakes – by Amy in 2016. Every cake presents new opportunities to expand my skills and explore new and different techniques.
