Step 2: USING A COLOUR WHEEL Step 3: PREPARING THE TILES FOR PAINTING A colour wheel helps to illustrate colour relationships and can also help to design harmonious colour schemes. There are a huge number of beautiful colours out there already mixed up (and I’ve got a heap of them!) However, for this tutorial, only red, blue, yellow, black and white have been used to demonstrate their relationship on the colour wheel. The tiles will need to be prepared in advance for this cake. Prepare a tile for each side of the cake you plan to cover. Roll out the fondant so it is slightly wider and higher than the side of the cake you are going to cover. The thickness should be approximately 2-3mm. Regardless of what medium you are using to decorate a cake, a colour wheel is a handy thing to have. It can help if you’re trying to mix fondant, buttercream or royal icing to create a unique colour to match a customer’s request. Flip the rolled-out fondant onto baking paper before cutting the tiles. Doing this means it can slide flat straight onto drying racks (if you don’t have a dehydrator you could use cake cooling racks or even just leave the tiles to dry on a flat surface. Cutting the tiles square means you will have plenty of straight edge pieces to line up with the edges of your cake. Scraps of fondant can be dried and used to test paint colours before using them on the tiles. It’s preferable to let the tiles dry before painting. If you choose to paint onto soft fondant, make sure to not let your hand rest on it. For painting inspiration look at fabrics, wallpaper and art. Inspiration is all around us!

Step 4: PAINTING THE TILES Each tile shows colour relationships and schemes using a colour wheel as well as the type of brush and equipment that was used. There are basic painting tips for each tile but remember there is no right or wrong way. Painting is such a personal thing – experiment and have fun. COLOUR RELATIONSHIPS: PRIMARY, SECONDARY AND TERTIARY COLOURS Mixing Primary Colours (red, blue and yellow) create the Secondary Colours of green (blue and yellow), orange (yellow and red) and violet (red and blue). Tertiary colours are made by mixing one primary colour with an adjacent secondary colour. For e.g., mixing blue with violet will create the tertiary colour blue-violet. Step 5: PAINTING REPEATING PATTERNS If you’re not confident at freehand painting (I’m certainly not!), imprinting fondant before it dries with shaped cutters and piping tips is a great way to create a repeating pattern. The imprint also helps to guide the paint and prevent paint bleed. An angular flat brush is good for curves and getting into tight angles. Step 6: PURE COLOUR, TINT, SHADE AND TONE Pure colour is the colour you start with. In this tile the pure colour is red. Tint is created by adding white to the pure colour. Adding more white creates a lighter tint. The flower petals were painted layering red and two different tints of red. Shade is created by adding black to the pure colour. Adding more black creates a darker shade. The stamens were painted using a dark shade of red. Tone is created by adding grey. More about that later. Step 7: PAINTING BASIC FLOWERS A round brush was used to paint the petals. A detail round brush was used to paint the stamen. Dots can be created by holding a detail brush perpendicular to the tile touching just the tip of the brush onto the surface. Lines can be also be created by changing the angle of the brush and dragging the tip along the surface. The thickness of the line will depend on how heavy or light the brush is pushed on to the tile surface. Step 8: Start with the lightest tint. Load the brush with paint then flatten the brush against the surface. As the brush is lifted away from the surface, drag the tip outwards slightly to create the tip of the petal. Imagine a stick figure person when painting the petal position (head, arm, arm, leg, leg). While the first layer of paint is still wet, dab a darker tint on top of the lighter tint. Blend the top layer by dragging the brush up towards the tip of the petal. Step 9: PURE COLOUR, TINT, SHADE AND TONE The final layer is the pure colour. Add a tiny amount to the centre and drag the tip of the brush towards the tip. To create the stamens, add black to the pure colour. Use the tip of the detail brush and dot the centre end of the petals.

Step 10: HARMONIUS COLOUR SCHEMES A colour wheel can help to decide what colours to put together when designing a cake. TRIAD COLOUR SCHEME Using any three colours equally spaced from each other on the colour wheel creates a triad colour scheme. The green, violet and orange on the first tile photo is an example of a triad colour scheme. PAINTING CIRCLES Using at least two, but no more than five consecutive colours that are adjacent to each other on the colour wheel creates an analogous colour scheme. This tile has been designed using blue, blue-green, green, yellow-green and yellow. Step 11: PAINTING CIRCLES A round cutter can be used as a guide to etch a faint line with a scribe or toothpick. A combination of a small flat brush and a fine detail brush were used to paint the pattern. Step 12: MONOCHROMATIC COLOUR SCHEME Using any tint, tone or shade of just one colour. Adding white has changed the tint. Adding black has changed the shade. Creating grey with equal amounts of black and white has changed the tone. Step 13: C OMPOSITION, ODD NUMBERS AND THE EYE Even numbers create symmetry, but odd numbers create interest. An odd number of items force your eyes to move around the grouping and therefore more effective at capturing your gaze. Each colour, tone, shade and tint has been repeated an odd number of times. Step 14: COMPLIMENTARY COLOUR SCHEME Using any two colours directly opposite each other on the colour wheel. On this tile it’s a primary colour (blue) and a secondary colour (orange). A small flat brush was used to create a random pattern. Step 15: SPLIT COMPLIMENTARY COLOUR SCHEME Using any colour with the two colours on each side of its compliment. On this tile the yellow was tinted with white. The compliment on the wheel to yellow is violet (blue and red mixed together). The adjacent colours to violet are blue- violet (adding more bluet to the violet) and red-violet (adding more red to the violet). A flower cutter and scribe were used to help draw the flower pattern. A soft flat brush is good to use when painting a large area.

Step 16: C  ONSTRUCTING THE CAKE TILE PLACEMENT Step 17: ‘GLUING AND GROUTING’ THE TILES Once the painted tiles are dry, the next stage of creative fun begins! Placement of the tiles is a bit of planning and also complete randomness. Only break off pieces from your painted tile as you need them. Approach it like a jigsaw – start with the corners and sides and work your way in (this is why the tiles are pre-cut as squares). Gunge is used as the tile ‘glue and grout’. Gunge is great as it dries hard like royal icing but the advantage of it is any excess can be scraped off without removing the paint. Royal icing could be used as the grout but avoid getting it on the painted surface. Once you have your mosaic pieces ready, pipe a small amount of gunge to the back of the mosaic piece and adhere it onto the cake. Wait for the mosaic pieces to set onto the cake before carefully piping the gunge into the cracks. Work on piping small segments at a time. Don’t over-fill the cracks. Use a silicon scraper to remove any excess gunge. Once the mosaic has been filled with grout, step back and admire your unique piece of edible art. f www.facebook.com/madhencakes

Step 11: Step 4: Step 1: Step 2: Take your pre baked cookies, white fondant and individual letter stamps prepared and ready to go. Roll out your fondant and cut your shapes using the same cutter you used for your cookies. Step 3: Stamp each cookie with your letters. I like to stamp all my fondant shapes first, and allow them to dry for a few minutes so I don’t stretch them out of shape when adding to my cookie. Step 5: Step 6: Step 7: Step 8: Flip them all over and wet the backs using water or sugar syrup. Hold your cookie upside down and place centred on the fondant. Gently lift and set aside right side up. Finish topping all your cookies. Add a small amount of each gel to the palette and fill with the alcohol. Mix the gel and alcohol together and dip your brush in to load it with liquid, dab and gently brush to a small area on your cookie, leaving room for your other colours. Step 13: Step 14: Step 15: Step 16: And the next… Finish off with your last colour. I like to leave some white fondant remaining. Take some edible gold paint or lustre mixed with alcohol, add some to a clean brush. Hold the brush over your cookies, and using your other hand, tap your wrist or the brush to splatter the gold over your cookies. You will need: Materials Tools • 6 inch double barrel cake covered in white • fondant • • 8 inch cake board covered in white • fondant • • Americolor airbrush colours: Avocado Green, Leaf Green, Egg Yellow, Lemon Yellow, Sky Blue, Navy Blue, Royal Blue, Warm Brown, Black, Antique Gold Paint brushes Rolling pin Craft knife Ribbon • Glue • Airbrush Step 2: Step 3: Mix a ratio of 1:4 of sky blue airbrush paint to decorator’s alcohol. Airbrush on lightly over the entire cake. Mix a 2:1 ratio of royal blue to sky blue and brush on from the middle of the cake downwards. Step 4: Step 5: Step 6: Step 7: Mix a ratio of 2:1 of avocado green to sky blue. Brush on in a sideways motion in the lighter areas. Darken the other areas. For a sparkly effect, brush on metallic midnight blue all over the cake. Airbrush the rocks with a light coat of egg yellow. Step 1: Create rocks by rolling and shaping fondant to fit the edge of the cake board. Let dry on a tray. Brush on navy blue from the bottom to approximately one third of the way up the cake. • Koi fish stencil • Paper towel or tissue • Edible paint colours: Orange, White, Navy • Tape Blue, Metallic Midnight Blue, Metallic Light Silver • 50:50 gum paste to fondant, kneaded together • Decorator’s alcohol • Water or piping gel Tips: • Practice on paper towel before transferring to the cake. • Brush from approximately 30 cm away when airbrushing larger surface areas when blending colours. Move closer when doing more detailed work. • Use a professional airbrush to use thicker metallic paints. You need to be able to adjust the PSI up to at least 40. • Wear a mask when airbrushing as you don’t want to go out in public with colourful nostrils. • Make a lily flower or lotus to go with the lily pad on top of the cake. f www.facebook.com/thesculptressofsugar

Step 8: Apply warm brown to the rocks, ensuring you get all sides. Don’t worry about the underneath. Let dry. Step 9: Step 10: Once rocks are dry turn over and spray on black around the edges. Let dry. Roll out fondant/ gumpaste mix and cut out a 6 inch heart shaped lily pad. Using a dresden tool, create lines for the vines of the leaf. Step 16: Step 17: Cut around edge with a knife. Step 12: Step 13: Step 14: Step 15: To create movement, lay rolled pieces of paper towel or tissue underneath the lily pad and allow it to semi dry. Tape off the stencil to leave you with the koi fish you want to create. Roll out fondant gumpaste mix to fit stencil. Airbrush gold and carefully remove stencil. Darken the centre of the leaf and airbrush the lines of the leaf that were created earlier. Attach lily pad on top with water or piping gel. Paint sections of the koi fish orange. Airbrush over with leaf green.

So instead I follow people from other industries that inspire me and help me to grow and flourish. This could be anything from polymer clay jewellery to abstract park sculptures. DO YOU HAVE A VISUAL ARTS BACKGROUND OR WAS HAND-PAINTING CAKES SOMETHING YOU FELL INTO? I have always loved art – it is my passion and if I could paint all day, I would! I have always been artistic. I have a background in canvas painting and children’s murals but it was just a hobby. I never studied or gained any formal art qualifications other than GCSE (UK General Certificate of Education) at school. MOST OF YOUR CAKES FEATURE HAND-PAINTED FLORALS. WHAT’S YOUR FAVOURITE FLOWER TO PAINT? I absolutely love roses, I love to paint them. When I first started painting flowers, I found roses to be very difficult due to the layers, but now I love painting them! WHAT ARE YOUR FAVOURITE COLOURS/ MEDIUMS TO PAINT WITH? My favourite medium is cocoa butter mixed with edible dusts. I love that you can get a really bold finish, almost like an oil painting. WHAT TYPE OF BRUSHES WOULD YOU RECOMMEND A BEGINNER INVEST IN? I love Pro Arte synthetic brushes and have been using them for a few years now. They are great quality brushes. I have also recently used brushes by Caking It Up and they are very good too so I will be also using these from now on. WHAT ARE YOUR TIPS FOR ACHIEVING REALISM WHEN PAINTING? Cake Chat Cake Chat with Amber Comadira-Smith from Commie’s Cupcakes Amber shares her design & cake expertise so that you can become the master cake decorator you’ve always wanted to be. I’m trying to steer away from cake trends and have a go at designing my own cakes. But I hate what I’m creating and I tend to get stumped for ideas. Can you help? Ahh...love this question! And it’s a relatively easy fix. Before you even think about turning on your oven, you need to take a deep dive into pre-planning (and designing!) your cakes. Trust me, it’s the only solution that’ll combat your indecisiveness, lack of ideas AND your harsh self critiquing. What’s the pre-planning process involve? Well, it starts with brainstorming, gathering inspiration and then drafting your ideas into rough cake concepts. It’s such an easy way to visually process your ideas, and ultimately, give you a clear direction for your final design. Unfortunately people tend to skip this pre-planning process altogether because they see it as ‘boring’, but what they don’t realise is that: 1. It sparks your creativity and gets your ideas following 2. Refines your ideas so you can create a stunning, professional and visually engaging cake 3. Gives you a clear direction for your end cake design, so that you won’t be stressing or guessing your way through the decorating process. So that’s my advice. Get into the habit of pre-planning and pre-designing and you’ll find this whole cake-design-thing will become alot more enjoyable and successful for you. This also allows you a bit of ‘breathing room’ to fix any issues that may crop up in the cake making process. But what SHOULD you do when you find yourself in this ‘cake fail’ situation? Firstly, take a step back and breathe. When times are stress- ful, you need to step away, clear your head and come back with a ‘can do’ attitude (yeah I know, easier said than done!). If you have time to fix your mistakes - like re-baking a cake or making more sugar flowers - then go for it. But if your situation is time sensitive (eg. the cake is due in 2 hours), then it’s just one of those ‘you have to make it work’ situations. Focus on what you CAN do. There is always a solution, even though it may not be the solution you want or hope for. Most of the time, you can turn a disaster into a win. Just know that you’re not alone - cake fails happen to EVERY- ONE. ACDN Member gallery PREP TIME: 30 MINS COOK TIME: 70 MINS We invited our members to submit to our member gallery - take a look at what they've been creating! SERVES: 10 INGREDIENTS METHOD Cake: 3 cups plain flour 2 cups CSR White Sugar ½ cup cocoa 2 tsp bicarbonate soda ¾ cup sunflower or vegetable oil 2 tbs white vinegar 2 tsp vanilla essence 2 cups cold water 1. Preheat the oven to 160°C fan forced. Grease and line the base of a 22cm cake pan. Buttercream Icing: 300g unsalted butter, softened 2 x 250g pkt CSR Chocolate Buttercream Icing Mix 6 tsp water Maltesers, to serve 4. For the icing, use an electric mixer to beat butter until pale and fluffy. Gradually add the 2 x buttercream icing mix packs and water, beating continuously for 3-5 mins. 2. Sift the dry ingredients into a bowl and mix to combine. Make three deep wells in the mixture. Pour the oil into one well, vinegar into the second and vanilla into the third. Pour cold water over the top and stir well with a whisk. Pour into the prepared cake pan. 3. Bake for 70 mins, or until a skewer inserted into the centre comes out with only some moist crumbs sticking to it. Allow to cool for 10 mins. Gently remove from the pan onto a cooking rack. Cool completely. 5. To assemble, slice cake in half horizontally. Place bottom half on a plate and spoon half the buttercream icing on top. Repeat with another layer of cake and icing. Use a hot knife or spatula to smooth icing around the sides roughly to create a ‘naked’ look. Top with halved Maltesers. ACDN member feature PEAL TOH OF PEARL'S CREATIONS Pearl Toh of Pearl’s Creations has made a name for herself in the Australian Cake Industry for her handcrafted sugar figurines. Her simple, clean-cut style lends it- self to a wide variety of wedding, birthday, and other celebra-tion cakes. Pearl has been creative with many different mediums for as long as she can recall. In 2013, she dis- covered that there were many ways to be creative in the kitchen as well after having been intro- duced to cake decorating.
