Texture is the difference between a cake that's decorated and one that's designed.
You put your heart into every cake, but when it comes to texture they still look plain. It isn't your creativity. It's your toolkit. This class gives you a clear system you can follow, step by step.
A system, not guesswork
Wafer paper, rice paper, fondant, edible fabrics, impression tools and buttercream. The how, the why, and the fixes for when it goes wrong.
Live, so you don't get stuck
Each week you work, then bring it to a live feedback session with Monica. Real coaching on your real cakes, not a video you watch alone.
Coaching, not just content
You post your work each week, Monica gives you real feedback, and you finish with a toolkit of textures you can repeat on every cake you make.
Six weeks. One texture skill at a time.
Pre-recorded lessons release each Friday at 8PM in the Cake! app, taught at three levels (beginner, intermediate, advanced). You get a full week to work through them, then join Monica and Emma live for a Q&A and feedback. Every session is recorded and available to revisit any time.
Wafer Paper Flowers
From simple filler flowers to Monica's signature Moreish Cakes wafer paper rose. Shaping, layering and designing with this elegant, edible medium.
Rice Paper Techniques
Colour, shape and transform rice paper, from sails and filler pieces to sculpted rice paper flowers with movement and modern elegance.
Fondant Textures
Embossing and royal icing overlays, a delicate wafer-like fondant finish, and the bold, weathered look of controlled crackle.
Edible Fabrics
Soft, flowing finishes that mimic real textiles: wafer lace, flexible wafer fabric and crepe-style wafer paper, kept supple and crack-free.
Impression and Texture Tools
Texture through imprinting and shaping: everyday tools, draping and folding for fabric-like movement, then pattern plates and impression mats.
Buttercream Textures
Textured buttercream finishes, fantasy-style blooms, and Monica's signature 3D sculpted buttercream flowers with a fine-art finish.

- Beginner to intermediate
- You haven't tried these techniques yet but you want your cakes to look high-end. You'll learn each one from the ground up.
- Intermediate to advanced
- You've dabbled but haven't mastered them. You'll build real confidence and ease, and add Monica's signature finishes to your range.
